1. Ingredients

  1. 3/4 pound bittersweet chocolate, coarsely chopped
  2. 2 sticks unsalted butter, cut into small pieces
  3. 1 teaspoon instant espresso, diluted in hot water
  4. 1 1/2 cups all-purpose flour
  5. 1 teaspoon baking powder
  6. 1/2 teaspoon salt
  7. 4 large eggs
  8. 2 cups granulated sugar
  9. 1 teaspoon vanilla extract
  10. 2 cups coarsely chopped walnuts

2. Cooking Directions

  1. Position rack in center of oven and preheat oven to 350 degrees. Butter, or coat with vegetable spray, an 8-inch square baking pan.
  2. Dust with flour, tapping out excess flour.
  3. Set aside.
  4. In the top of double boiler or medium heatproof bowl set over simmering water, combine chocolate, butter, and espresso (if desired), stirring occasionally until almost melted.
  5. Turn off the heat, stir, and let melt completely.
  6. Sift together the flour, baking powder, and salt. Set aside.
  7. In a large heatproof mixing bowl set over simmering water, whisk the eggs, sugar, and vanilla until the sugar dissolves.
  8. Transfer to the large bowl of an electric mixer, on high speed, using paddle or beaters, beat until pale yellow.
  9. Lower speed to medium, scrape in the chocolate mixture, and beat until well mixed.
  10. On low speed, gradually add flour mixture and beat just until combined.
  11. Add 1 cup of walnuts and again, on low speed, beat just until combined.
  12. Scrape into prepared pan and sprinkle remaining walnuts over top of cake.
  13. Bake until edges of cake pull away from sides of pan and a toothpick inserted into center of cake comes out clean, 40 to 45 minutes.
  14. Cool on wire rack.
  15. To serve, cut the brownies into 9 squares, each about 2 1/2 inches.
  16. Serve as is or with softly whipped cream or ice cream of your choice.

Yield: 9 servings

3. Still Hungry?

These are sinfully dense brownies, fudgy and rich. They can be made in a 9-inch round pan, if you prefer, cutting in wedges rather than squares.

    A note to JanJan, don't critique a recipe unless you made it and tried it. If you don't like sweets, don't critique the recipe. Go eat your barely and grains and puke after every meal to keep up with the Hiltons, Richies and Lohans.
    But if you would like to try a great brownie recipe try this one, it's easy to make. I also made a cream cheese iceing to spread over top.
    1pk of 8oz cream cheese, 1/2c of butter,1tsp Vanilla and 1/2lb of confectionary sugar( or more). Then pour nuts on top of icing.

    Just a heads-up here... Perhaps you have never eaten anything close to 'gourmet' food, but Wolfgang Puck, along with just about every other chef in the WORLD, cooks good food. Not food that is good for you, but good food. You search the Web, looking for a delicious brownie recipe, and belly-ache about the calories? Talk about stupid!! It's a brownie: It's a chocolate cake with little-to-no flour. What did you expect? Have you ever eaten any of Wolfgang's creations? They are not low-fat; They are, well... GOURMET!

    Tell you what: Find a vegan recipe that has 24 grams of saturated fat and cry about that... Don't come here and vent about a high-cal brownie. Idiots...

  • Smaller portions?

    My solution to saving calories and fat per serving was to cut the brownies into smaller pieces...1 1/2" x 1 1/2". This way people (especially me) could enjoy them without so much worry. The worst thing you can do is deny yourself something while everyone around you is enjoying them. I and other readers have noticed that Wolfgang's recipes are high in calories and fat, but I don't think we'd make a regular habit of making his dishes, probably only for special occasions. Bon Appetit everyone !!!!

    Back in the day when our old people and children ate all they wanted and still had long lives we did not have calories to count we were foot loose and fancy free these brownies brings back the good old days

    This recipe looks delicious and yet, it really is a LOT of calories.....but I guess to have one every once in awhile would be fun.
    What bugs me if how some people react so angrily to other's comments.
    If someone says it's too much fat, well, that's the beauty of American, you have that right to express........if another says lots of fat is fun, well, they too have that right.
    After all folks, it's just a recipe....save your anger for the terrorists, not the ones who critique a brownie for pete's sake.
