1. Ingredients

  1. 3 tablespoons Olive Oil
  2. 1 large onion, diced
  3. 1/2 pound Mushrooms, finely chopped
  4. 3 Large cloves garlic, minced
  5. 1 cup Heavy Cream
  6. 1 1/2 teaspoons Minced fresh oregano
  7. 1 1/2 teaspoons Minced fresh thyme
  8. 1 1/2 teaspoons Salt
  9. 1/2 teaspoon Freshly ground black pepper
  10. 1 pound Lean ground pork
  11. 1 pound Lean ground beef
  12. 1 pound Ground veal
  13. 1 Egg, lightly beaten
  14. 3/4 pound Sliced bacon

2. Cooking Directions

  1. In a large skillet over medium high heat, heat the olive oil.
  2. Saute the onions until translucent, about 8 minutes.
  3. Add the mushrooms and garlic and cook over medium high heat for 3 or 5 minutes.
  4. Add the cream, oregano, thyme, salt and pepper.
  5. Bring mixture to a boil.
  6. Reduce heat and simmer 5 minutes or until vegetables are tender.
  7. Cool vegetable mixture.
  8. In large bowl, combine the beef, pork, veal and vegetable mixture.
  9. Stir in the egg.
  10. Preheat oven to 400 degrees F.
  11. Place a 9 x 5 x 2 1/2-inch loaf pan with the short side facing you.
  12. Take bacon slices and place them across the pan, slightly overlapping, to line the bottom and sides.
  13. Continue with the meat mixture, patting down to level.
  14. Fold the ends of the bacon strips up and over the ground meat mixture.
  15. Place the loaf pan in a larger baking or roasting pan and fill the larger pan with boiling water halfway up the sides of the loaf pan. Cover with aluminum foil and bake for 1 hour.
  16. Remove the foil and continue to bake 30 minutes or until an instant read thermometer registers 165 degrees F.
  17. Remove the meatloaf from the oven and let rest for 10 minutes.
  18. Carefully pour the juices out of the pan.
  19. Cut into 8 slices.

Yield: 8 servings

3. Still Hungry?

This is one of the most popular dishes in my Cafes, probably because it reminds people of home cooking and their grandmothers! The bacon helps keep the meatloaf moist, a key concern and one of the reasons that I always cook this dish in a water bath.

Notes:

Serve with pan juices and Garlic Mashed Potatoes or Mashed Potatoes with Caramelized Onions

I like to drink one of my favorite reds with this stew, a wine that's as straight-forward and satisfying as the dish itself.

Clos du Bois or Geyser Peaks Cabernet Sauvignon would be my choices, but you might have your own favorite.

    I tried this recipe and I was pleasantly surprised that the meatloaf is so moist. The cream makes it extremely good. While I did not put a pan of boiling water around the pan with the meatloaf, it turn out well. The only thing I would ask is how to make the bacon a bit more crisp.

    I made this wonderful recipe last night and it is sooo good..I just used ground turkey and a little bit of ground beef for the meat mixture and it was wonderful!!

    First of all to the person who wrote "Worst meatloaf" you should know that not all people like the same ingredients. Instead of writing the kind of review you did, you simply should have made a suggestion that if people didn't like a strong thyme flavor to cut back on that ingredient. I simply used my own meatloaf recipe which isn't to different from this one (no thyme) and wrapped it in bacon. It was the bacon in the recipe that caught my eye. Absolutely delicious!! Thank you for the wonderful recipes!!

    If you are a health nut then don't look at meat products or are you scared of good food. now excellent idea on the bacon
