  • A little assistance.

Firstly, despite the fancy sounding ingredients, this recipe is much easier than it looks. As the notes state tomato concasse is merely peeled, seeded and diced tomatoes which can be found canned. It\'s not necessary to go through the whole process with fresh tomatoes. \'Double-Blanched Garlic\' is essentially peeled garlic cloves put in simmering water to cook for a minute or 2, removed from the hot water, chilled in iced water, and the cooking and cooling process repeated one more time. It takes the strong bite out of the garlic but again isn\'t completely necessary, less raw garlic can be added to taste or roasted, whatever your taste preference. Time wise, it\'d be convenient as another user has said to make this on a weekend, but why not make 2 or 3 batches of the tomato base, and freeze the extra so then should you want to make the sauce again in a month\'s time or so, half the work is done already. Hope this helps some of you. :-)

  • Quick and Easy???

    wordsmith91%40sbcglobal.net - January 22, 2007 04:38:51 PM PST
Tomato concasse? Double-blanched garlic?? What is quick or easy about this recipe? Did anyone even look at this before posting it? Leave this for a weekend meal, if at all.

  • Don't get scared!

C\'mon guys don\'t you realize this is Wolfgang Puck we\'re talking about here. Of course you\'re going to expect things like tomoto comcasse, etc. I have a MUCH simpler solution. First, forget about making your own sauce. If you have the time, then ok. But for me, like a lot of people I\'m sure, time is precious. Barilla or Napa Valley Bistro (Mezzeta) are two great brands of pasta sauce. In fact, the Arrabbiata Pasta sauce from NVB is perfect for this recipe. It has garlic. chili pepper, herbs, all blended together with Extra virgin olive oil and Cabernet Sauvignon wine. All natural, no preservatives.

Tomato concasse is just a fancy way of saying to rough chop your tomatoes. The recipe is not super easy but its easy enough to make. I liked it anyway. Good job :)

  • What The Heck????

    roland2000%40sbcglobal.net - January 22, 2007 07:26:58 PM PST
These are not fast easy recipes ,who said these were easy to make. Lots of work dont know what half the stuff is.. Break it down and just open a can of sauce, and your done.. That would be easier...I make a sauce that is easier with fresh vegtables..

  • Sorry but if this is too hard for you...

    mschaseslover - February 26, 2007 03:47:02 PM PST
...give my regards to the guys at McD\'s and Taco Bell. I\'ve done three of the recipes and have had all of them done in the time frame described.

Plus remember you don\'t have to do things from scratch if you don\'t want to or don\'t feel comfortable doing it. No time to blanch and peel tomatoes? Use canned. The quality difference isn\'t perceptible to 99.9% of the people out there. While I personally wouldn\'t use it, keep a jar of prechopped garlic in the fridge. It has a little more bitter taste to it but again no one will likely notice.

  • Confused

    Erin L - February 26, 2007 03:18:33 PM PST
I found this recipe by clicking on a link for Stress Free and Quick meals. I\'m sorry but no recipe with this many ingredients, including blanched AND sliced garlic could possible be quick. Although it looks delicious I think it belongs in a different category.

I don\'t even know what the heck a tomato comacasse is...is it just a bunch of tomatoes??? If it is then why not just say that. I wanted something fast, quick and easy. Tomato comacasse makes me think it\'s something special that I don\'t know......

...yeah. Maybe this recipe is easy if you are already familiar with cooking things of this nature, but for us laypeople it is a bit involved. And the picture looks like a bad heartworm infection with a little garnish for good measure.

  • Very close to my own recipe

    icycle11 - June 12, 2007 08:35:57 AM PST
Other than the double blanched garlic...this is the way I make my own sauce. It is not difficult or time consuming once you have done it more than once. I would never consider using a jar sauce, so for me this is one of the easiest ways to make a tomato sauce. I never double blanch garlic...the trick to garlic is to mince it very finely and not to brown it. Make sure the oil is not too hot and saute it slowly to avoid any bitterness. If it starts to bown... remove from heat immediately. Good luck and once you get the hang of it it ....is super fast. For the person who recomended using jar sauce instead....jar sauce is for dorm rooms.

  • Italian cooking is simple cooking not this!

    Giuditta T - June 11, 2007 10:58:54 AM PST
This Angel hair pasta has too many spices and in the end it tastes like nothing. Trying to be fancy and make things complicated just looks good in the eye of those who can\'t cook.

Sugar honey ? please they are not needed
    parsley is not needed
    thyme in tomato sauce?
    tomato paste? not needed

The best way to enjoy Angel Hair with tomatoes is to use fresh tomatoes and fresh basil (onion and garlic are always a must.)

  • He is German after all;)

    leelou2000 - June 5, 2007 11:19:59 AM PST
Don\'t be afraid of this recipe...you can buy your "Tomato concasse" in a can AKA Pealed and Chopped tomatoes. I personally like the seeds. Double blanch the garlic..is he serious... Why remove the potancy of garlic? Just go for the go...add your own flavors even. Italian cuisine is all about aroma and flavor;) Practice making your own recipe and eventually you will have your own masterpiece. Its not like the ingredients of this are going to break the bank.

  • Almost funny

I\'d like to see the average mom or dad come home from work and see this as easy or quick. Especially when you can get much the same taste with a container of warmed Bruschetta to pour over the pasta.

We all know any recipe that is new can have its difficulties. For those who are brain dead well it takes a little to get a little out of a meal. If you want super extra mega easy simple then buy a microwaveable tv dinner, lol. If you\'re smart you would read the recipe before to see if you can handle it, don\'t criticize the recipe because you\'re not capable of fulfilling it. Just take it easy, read the steps and see if you can actually make it in the time frame described. Trying new recipes is always fun and especially pasta which is soooo yummy. This recipe is good and you can use any tomatoes you want, thank you! It\'s worth the hassle and will probably help you to understand other recipes as well. The ingredients can be googled to see what they are, if you\'re lazy then tuff jaja. Alright that\'s enough, happy cooking! Hooray for yahoo food!

  • NO WAY MAN!!!

    nnttknight - February 26, 2007 03:30:13 PM PST
These recipes are not easy to make. They calls for things I have not ever heard of. These recipes will take time and patience to make sure you get it right. My time is too hectic for that. I would prefer just making my own or opening a jar of sauce. ZNo way will I ever try these. NO WAY!!!

  • Great Recipe

    canewsam - February 26, 2007 08:33:29 AM PST
I wish people would read recipes before they try and make them. If you don\'t know what something is , maybe you should try a simpler recipe, like mac and cheese. Other then that this is a great SIMPLE recipe that my 5 year old son loves.
