1. Ingredients

  1. 1/2 cup vegetable oil
  2. 1/4 cup soy sauce
  3. 3 tablespoons honey
  4. 2 tablespoons white wine vinegar
  5. 1 teaspoon ground ginger
  6. 3/4 teaspoon garlic powder
  7. 4 (6 ounce) boneless, skinless chicken breast halves
  8. 4 hard rolls or croissants
  9. 1 cup finely shredded lettuce
  10. 8 tomato slices
  11. 4 green pepper rings
  12. 1/4 cup mayonnaise (optional)

2. Cooking Directions

  1. Combine the first six ingredients in a blender; process for 30 seconds. Reserve 1/4 cup. Pour remaining sauce into a large resealable plastic bag. Add chicken; seal and refrigerate overnight. Drain, discarding marinade. Broil chicken 4 in. from the heat for 5 minutes per side or until juices run clear. On bottom half of each roll or croissant, layer lettuce, tomatoes, chicken and green pepper. Drizzle with reserved sauce; spread with mayonnaise if desired. Top with other half of roll or croissant.

Yield: 4 servings

3. Still Hungry?

After trying a similar sandwich in Hawaii, I was inspired to create my own. My sister-in-law contributed the marinade and together we came up with this hearty version.

Editor's Note: Chicken may be grilled, covered, over low coals for 10-12 minutes or until juices run clear.

    You asked "Where is the teriyaki? I see soy, but no teriyaki".

    For your information, teryaki is a marinade that is based on soy sauce, garlic and ginger.

    There is your teriyaki. The recipe is guiding you to make it from scratch, it is not from a bottle.

    I cringe when I see stuff like this.

    I tried this recipe and everyone really liked it. I had thought about the pineapple rings as I was reading it and someone had already suggested that and to put the provolone cheese on it. That made it sound even tastier. so, next time I make that, I'll have to try the pineapple and cheese, I was also thinking you could put some sauteed onions on top if you're a fan of onions.

    Have been looking for a good chicken sandwich recipe and this was is simply great. The sandwiches came out juicy and the marinade added awesome flavor. I may try it with the provolone next time. I've been wondering if there is any way to get around using oil in the marinade though.

    The recipe sounds insanely good, and I am going to try it. I am almost positive if you add the pineapple and cheese and toss out the green pepper, you will have a sandwich not unlike the one that hardees offered a few months back. Hawiian chicken sandwich ring a bell?
