  1. 1 3/4 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 1/2 cups buttermilk
  6. 3 eggs, lightly beaten
  7. 2 tablespoons vegetable oil
  8. 1 tablespoon honey
  9. 1/2 cup butter or margarine, softened
  10. 1/3 cup honey
  11. 2 tablespoons orange juice concentrate

Cooking Directions

  1. In a mixing bowl, combine flour, baking powder, baking soda and salt. Combine buttermilk, eggs, oil and honey; add to dry ingredients and mix well. Pour batter by 1/4 cupfuls onto a lightly greased griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. For orange honey butter, combine butter and honey in a medium bowl; beat well. Stir in orange juice concentrate until smooth. Serve with pancakes.

Yield: 4 servings

Whenever I ask my family what they want for breakfast, they invariably ask for these pancakes. Not only are they light and fluffy, but my homemade orange butter adds a special sweet flavor.

    You list honey twice but do not indicate which goes with the mix or the topping.

    oh it's awesome;i lived in the US for one year & i used to have pancake every morning,well when i came back home (Morocco) they had no pancake so i started searching for its recipe but honestly this one is the best

    OldBaldy, when you read a recipe's list of ingredients, they will always be found in the order in which they will be used as directed by the cooking instructions. So, the first honey listing is referring to the pancakes themselves as clearly noted in the directions and the second honey listing is referring to the orange-honey butter.

    Nada,
    Buttermilk is a dairy product that you can find in your grocery store's dairy section. It is a tart, clumpy, partially fermented liquid milk product sold in a carton. It is great in recipes that call for it, such as pancakes, ranch dressing, and some cake recipes call for it. Adds a great taste, and provides the acid that causes baking soda to react and bubble in cake recipes.
