  1. 2 cups pancake mix
  2. 1 egg
  3. 1 1/2 cups eggnog
  4. 1 1/2 teaspoons vanilla extract
  5. Pinch ground nutmeg
  6. 1 (16 ounce) can whole-berry or jellied cranberry sauce

2. Cooking Directions

  1. Place pancake mix in a bowl. In another bowl, whisk egg, eggnog, vanilla and nutmeg; stir into pancake mix just until moistened.
  2. Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with cranberry sauce.

    We tried these at work last Saturday night-- they were delicious--even without the cranberry sauce. The person who brought them made just one slight change. She added dash of cinnamon along with the nutmeg. I would definitely recommend these to anyone who has a sweet tooth-- the taste is reminiscent of poundcake and the cakes are fluffy and not as heavy as normal breakfast pancakes. The eggnog taste is just right! My teenagers even like them reheated as a snack. I will definitely be making these during eggnog season.
