  1. 1 1/3 cups shortening
  2. 1 1/2 cups sugar
  3. 2 eggs
  4. 1 teaspoon almond extract
  5. 3 1/2 cups all-purpose flour
  6. 2 teaspoons baking powder
  7. 2 teaspoons baking soda
  8. 1 teaspoon salt
  9. 1 1/2 cups flaked coconut
  10. 1 cup maraschino cherries, chopped

2. Cooking Directions

  1. In a mixing bowl, cream shortening and sugar. Add eggs and extract; mix well. Combine flour, baking powder, baking soda and salt; gradually add to creamed mixture. Stir in the coconut and cherries (dough will be very stiff).
  2. Drop by rounded teaspoonfuls 2 in apart onto greased baking sheets. Bake at 375 degrees F for 10-12 minutes or until lightly browned. Cool on wire racks.

    This was a wonderful tasting cookie. It was flavorful and stayed soft and chewy for days after baking. I even froze them and they retained their taste and texture. I will definitely use this recipe again.
