1. Ingredients

  1. 6 quarts popped popcorn
  2. 2 cups packed brown sugar
  3. 1 cup butter or margarine
  4. 1/2 cup corn syrup
  5. 1 teaspoon salt
  6. 1 tablespoon vanilla extract
  7. 1/2 teaspoon baking soda

2. Cooking Directions

  1. Place popcorn in a large bowl and set aside. In a saucepan, combine brown sugar, butter, corn syrup and salt; bring to a boil over medium heat, stirring constantly. Boil for 5 minutes, stirring occasionally. Remove from the heat. Stir in vanilla and baking soda; mix well. Pour over popcorn and stir until well-coated. Pour into two greased 13-in. x 9-in.x 2-in. baking pans. Bake, uncovered, at 250 degrees F for 45 minutes, stirring every 15 minutes. Cool completely. Store in airtight container or plastic bags.

Yield: 22 servings

3. Still Hungry?

'Can't stop eating it!' say guests about my caramel corn. For our basketball party. I fix enough to fill a big red tin decorated with the University of Arizona logo. The delectable syrup coats the popcorn well but isn't sticky.

    Yes... I have been making my caramel corn this way for years. Folks love it... and I am always passing out the recipe too. I like to toss into my caramel mixture prior to pouring over the popped corn, a couple handfuls of walnuts. The heat of the hot carmel pulls the walnut oils out... and the caramel corn is only enhanced. Its a wonderful thing!

    I got this recipe originally in my Taste of Home magazine a few years back and this is definitely my family's favorite snack recipe. I have made it several times and even let my kids help with the stirring. We make it when we have an evening of TV football or family game night. I was so surprised to see it on the Yahoo home page. I'm printing it off for my recipe box as I have so many TOH magazines and sometimes cannot find the recipe right away but have to look through several magazines before finding it. I am just so glad to see it here!

    Got this same recipe in a book called "A Family Raised On Sunshine", it was a wedding gift 28 years ago. Been making it for my family for years, they fight over it. I also add different nuts to the recipe for varation. Pecans are a good choice.
