  1. 1 cup all-purpose flour
  2. 1 teaspoon baking powder
  3. 1/2 cup butter or margarine, softened
  4. 1 egg
  5. 1 tablespoon milk
  6. 3/4 cup apricot preserves
  7. 1/4 cup butter or margarine, softened
  8. 1 cup sugar
  9. 1 egg
  10. 1 teaspoon vanilla extract
  11. 1 cup flaked coconut

2. Cooking Directions

  1. In a bowl, combine flour, baking powder and butter. Add egg and milk; mix well. press into a greased 9-in. square baking pan. Spread with preserves; set aside. In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Stir in coconut. Carefully spread over preserves. Bake at 350 degrees F for 25-30 minutes or until a toothpick comes out clean. Cool on a wire rack.

Yield: 18 servings
