1. Ingredients

  1. 6 tablespoons butter or margarine, divided
  2. 1/4 cup all-purpose flour
  3. 1 teaspoon dried parsley flakes
  4. 1 teaspoon salt
  5. 1/2 teaspoon dried thyme
  6. 1/4 teaspoon pepper
  7. 3 cups milk
  8. 6 cups thinly sliced peeled potatoes
  9. 1 1/2 cups chopped fully cooked ham
  10. 1 small onion, grated

2. Cooking Directions

  1. In a saucepan, melt 4 tablespoons butter. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes.
  2. Combine potatoes, ham and onion; place half in a greased 2-1/2-qt. baking dish. Top with half of the sauce; repeat layers. Cover and bake at 375 degrees F for 65-75 minutes or until potatoes are almost tender. Dot with remaining butter. Bake, uncovered, 15-20 minutes longer or until potatoes are tender.

Yield: 4 servings

This dish is a crowd-pleaser with its creamy sauce, chunks of ham and potato slices. I always enjoyed it when Mother made it. I added the parsley and the thyme, and now my husband and five children request it.

    The recipe is very good but you can slim it down with the use of skim or 1% and the cheese slim down to use of the Kraft 2% cheese. Also, for future knowledge, when you use skim or 1% to make a sauce base for gravy or mac and cheese it will be just as creamy and use cornstarch instead of flour as that is less dense and leaner calories!

    I didnt put onions in it, cause my family doesnt like them. I added a Lot of cheese, thats the one thing its missing, and it was yummy, im making it again next week!!

  • Make it fast for hungry kids

    Instead using 6 tablespoons of butter, I replaced half of butter with olive oil and mixed in some Italian cheese mix. After mixing all the ingredients together in the baking dish, I first microwaved the dish for 10 minutes, then placed it in the oven at 400 degrees for another 25 minutes. It had a perfect cresty on top. A great receipe for the leftover ham. Everyone loved it!

    I DO like onions so I added two (but sliced and sauteed them a bit before adding to the potatoes). I never use anything but skim milk and it was creamy and delicious. My freshly-ground pepper and garden thyme helped too. LOVED IT!

    No cheese though.........didn't see it in the recipe..........didn't need it.

    Sliced green bell peppers circles to it along with the onions and ham. It gives it a little boost in flavor. Yummmmm.
