1. Ingredients

  1. 2 medium green bell peppers
  2. 1 medium sweet red pepper
  3. 1 medium yellow bell pepper
  4. 2 ripe medium plum tomatoes, seeded and chopped
  5. 1/3 cup finely chopped onion
  6. 1 teaspoon chili powder
  7. 1/2 teaspoon ground cumin
  8. 1 1/2 cups cooked rice
  9. 1/2 cup shredded Monterey Jack cheese
  10. 1/4 cup minced fresh cilantro or parsley
  11. 1/4 teaspoon hot pepper sauce
  12. 1/2 cup shredded sharp Cheddar cheese

2. Cooking Directions

  1. Cut peppers into 1-1/2- to 2-in. squares. Cut each square in half diagonally to form two triangles; set aside. In a lightly greased skillet, cook the tomatoes, onion, chili powder and cumin over medium heat for 3 minutes or until onion is tender, stirring occasionally. Remove from the heat. Add rice, Monterey Jack cheese, cilantro and hot pepper sauce; stir well.
  2. Spoon a heaping tablespoon onto each pepper triangle. Place on greased baking sheets Sprinkle with cheddar cheese. Broil 6-8 in. from the heat for 3-4 minutes or until cheese is bubbly and rice is heated through.

  • Cilantro instead of cumin?

    Why would you substitute fresh cilantro for the cumin? I can see adding fresh cilantro.... but, the two ingredients have different consistencies. When I tried this recipe I took your advice and added fresh cilantro and also included the cumin. Very nice flavor!! This is a great recipe. It tastes great and is a great conversational piece.

    This recipe is easy to make, and delicious!! I used fresh cilantro instead of cumin, but that's a personal preference. Just think how much less fat this has than nachos made with fried tortilla chips!!
