1. Ingredients

  1. 2 teaspoons snipped fresh dill
  2. 1/2 teaspoon lemon-pepper seasoning
  3. 1/2 teaspoon salt (optional)
  4. 1/4 teaspoon garlic powder
  5. 1 (1 1/2 pound) salmon fillet
  6. 1/4 cup packed brown sugar
  7. 3 tablespoons chicken broth
  8. 3 tablespoons vegetable oil
  9. 3 tablespoons soy sauce
  10. 3 tablespoons finely chopped green onions
  11. 1 small lemon, thinly sliced
  12. 2 slices onion, separated into rings

2. Cooking Directions

  1. Sprinkle dill, lemon-pepper, salt if desired and garlic powder over salmon. Place in a large resealable plastic bag or shallow glass container. Combine brown sugar, broth, oil, soy sauce and green onions; pour over the salmon.
  2. Cover and refrigerate for 1 hour, turning once. Drain and discard marinade. Place salmon skin side down on grill over medium heat; arrange lemon and onion slices over the top. Cover and cook for 15-20 minutes or until fish flakes easily with a fork.

Yield: 6 servings

Notes:

Editor's Note: Salmon can be broiled instead of grilled. Place the fillet on a greased broiler pan. Broil 3-4 inches from the heat for 6-8 minutes or until fish flakes easily with a fork.

    i found this recipe to be very easy and very delicious. since i don't have a grill, i baked it instead which worked out really well. it's a fun meal to make for someone who is not a very experienced cook and it will certainly please your guests.
