1. Ingredients

  1. 8 medium carrots, cut into 1-inch chunks
  2. 4 celery ribs, cut into 1-inch chunks
  3. 1 cup chopped onion
  4. 1/2 cup butter or margarine
  5. 2 (10.5 ounce) cans condensed beef consomme
  6. 4 2/3 cups water, divided
  7. 2 teaspoons salt
  8. 1/4 teaspoon pepper
  9. 3 cups cubed cooked turkey
  10. 2 cups frozen cut green beans
  11. 1/2 cup all-purpose flour
  12. 2 teaspoons Worcestershire sauce
  13. 1 1/2 cups all-purpose flour
  14. 2 teaspoons baking powder
  15. 1 teaspoon salt
  16. 2 tablespoons minced parsley
  17. 1/8 teaspoon poultry seasoning
  18. 3/4 cup milk
  19. 1 egg

2. Cooking Directions

  1. In a Dutch oven, saute carrots, celery and onion in butter for 10 minutes. Add consomme, 4 cups water, salt and pepper. Cover and cook over low heat for 15 minutes or until vegetables are tender. Add turkey and beans; cook for 5 minutes. Combine flour, Worcestershire sauce and remaining water until smooth; stir into turkey mixture. Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
  2. For dumplings, combine flour, baking powder and salt in a bowl. Stir in parsley and poultry seasoning. Combine milk and egg; stir into flour mixture just until moistened. Drop by tablespoonfuls onto simmering stew. Cover and simmer for 10 minutes; uncover and simmer 10 minutes longer.

Yield: 10 servings

    Instead of using the condensed soup, yuck, stir in two tablespoons of flour after you've sauteed the vegetables. Cook for about 2 minutes and then add a 32oz container of beef stock. This will appear to be thin, but once the flour combines with the stock it will begin to thicken. Just continue to simmer the stew, and reduce until it's to your desired consistency. I also suggest that you add your dumplings before reducing since the extra flour and milk from the dumplings will thicken the stew as well. I personally hate to use "condensed" soups. Read the back of your label and take a look at the chemicals used to "condense" your soup.

    This meal really hits home. It's great for a cold night and it's absolutely delicious. Says it makes about 10 servings but I would say more like 8.

    This is my favorite way to use up leftover turkey. The broth was incredibly tasty. I had never used beef consomme before and now I'm a fan. Don't listen to that other reviewer who puts it down because it uses canned consomme. The only thing I did different is to add a bay leaf while cooking it and I would leave the lid on the whole time while simmering the dumplings. I think this was better than chicken and dumplings- more flavorful. Give this one a try!
