My better half and I are always trying new recipes, and watching our waistlines... so for this recipe:
We changed:
-the 1/3 c. butter to 1/3 c. chicken broth plus 1 egg
-the 1 1/2 c. whipping cream to 1 c. half-and-half
-the 1 T. butter to 1 T. chicken broth
and reduced the 3/4 c. almonds to 1/2 c. almonds.
We also used 4 ounces chicken breasts (six total).
This reduced the calories to around 400, and the fat to around 25 g. We felt that the dish was still very rich, and didn't miss the additional fat or calories one bit. The chicken was very moist, and the toppings were very flavorful.

There is enough fat and calories in one portion of this for an entire day's meals.

Uh...no, this WILL NOT give you a heart attack. This will give you a heart attack if you eat it every day, or three times a week, with a nice slice of cheesecake for dessert. Additionally, the fat from the almonds is GOOD fat...now, I'm sure that the majority of the fat is from the butter, cream, etc., but the point is that, in and of itself, fat does not necessarily equal bad. Unfortunately, the recipe doesn't provide a breakdown of fat between saturated and non-saturated, although smoeone interested enough could infer it on their own. This recipe is not being billed as health food. There are plenty of websites and magazines for that (Cooking Light is a good example). Please spare us the commentary, Food Police. There are many of us, myself included, who would feel no guilt about making this over a weekend, because I eat strictly during the week and exercise. There are LOTS of people out there who are capable of making rational diet choices without someone telling them that every plate of food with more than a gram or two of fat will kill them.

FYI...research has indicated that BAD carbs are really the problem with diets. That would be white flour, white sugar, white pasta, white rice, etc. I see no problem with this recipe, except I would substitute whole wheat flour and whole wheat bread crumbs for the white. How do I know this works? I have lost 25 pounds eating this way! Focus on the BAD carbs, not the fats. I guarantee you WILL see RESULTS. As for this recipe, sounds yummy...I'm going to try it! God Speed and great success to all of you who are wanting to lost weight. This way of eating REALLY works and you NEVER go hungry!

I've had a similar recipe to this one except the almonds were put in a food processor until they were fine crumbs ,oh and you can put it on the skillet or bake it.
