1. Ingredients

  1. 3/4 cup butter, softened
  2. 1 cup SPLENDA(R) No Calorie Sweetener, Granulated
  3. 2 teaspoons freshly grated lemon peel
  4. 2 teaspoons molasses
  5. 2 large eggs
  6. 1/2 cup unsweetened applesauce
  7. 1/3 cup apple juice concentrate
  8. 1 3/4 cups all-purpose flour
  9. 2/3 cup old-fashioned oats
  10. 1 teaspoon baking soda
  11. 1 1/2 teaspoons ground cinnamon
  12. 1/8 teaspoon ground nutmeg
  13. 1 cup diced fresh apples
  14. 1/2 cup raisins

2. Cooking Directions

  1. Preheat oven to 325 degrees F. Lightly spray cookie sheets with vegetable cooking spray.
  2. Beat butter, SPLENDA(R) Granulated Sweetener, lemon peel and molasses on high speed with an electric mixer 1 minute. Add eggs, one at a time, beating just until yellow disappears after each addition.
  3. Combine applesauce and apple juice concentrate; set aside.
  4. Combine flour, oats, soda, cinnamon, and nutmeg. Gradually add to butter mixture alternately with applesauce mixture, beginning and ending with flour mixture, beating at low speed until blended after each addition. Stir in apples and raisins.
  5. Drop by tablespoonfuls, 1 1/2 inches apart, onto prepared baking sheets.
  6. Bake 10 to 12 minutes. Cool on wire racks.

Yield: 30 servings

    I am an experienced baker who followed this recipe EXACTLY and wound up with apple oatmeal goop that was too runny to be baked into much of anything, let alone cookies. I was really mad that I spent an hour and a half getting everything ready and peeling and chopping apples so I salvaged the goop by adding twice as much flour as called for. I ended up with apple oatmeal cakey pancake cookies that taste fine but are sticky and weird looking. Definitely don't waste your time on this one.
