  1. 1 cup fresh or frozen unsweetened blueberries, thawed
  2. 1/2 cup sugar, divided
  3. 2 cups milk
  4. 6 tablespoons yellow cornmeal
  5. 3/4 teaspoon grated lemon peel
  6. 1/2 teaspoon vanilla extract
  7. 1/4 teaspoon salt

2. Cooking Directions

  1. In a small microwave-safe bowl, combine blueberries and 1/4 cup sugar. Microwave,* uncovered, on high for 3 minutes or until sugar is dissolved, stirring once.
  2. In a 3-quart microwave-safe bowl, combine the milk, cornmeal, lemon peel, and remaining sugar. Cover and microwave on high for 7 minutes or until thickened, stirring every 2 minutes. Stir in the vanilla and salt. Pour into dessert dishes; cool slightly. Top with blueberry sauce.

    My passion is cooking and I can tell already that this is a winner...Simple, healthy and I can already taste it...Make it sugar free using Agave nectar...Don't know what this is?...Check it out on line...You can find it in the health food section of most grocery stores...Use it like you were baking with honey...2/3 to 3/4 the amount...It's natural and has a low glycemic index...Will write another review after I make it...With details!! PK
