    Olive oil, particularly Extra-Virgin, is an EXCELLENT source of HEALTHY, let me repeat, HEALTHY Fat.
    To narrow-mindedly focus on how many grams of Fat is to miss the point of what Health really
    entails.
    People need to understand that when everything is low fat or no fat,
    the body interprets this as a STARVATION SIGNAL and will then Hold on to its fat stores, actually making it HARDER for the body to lose weight ! Kind of ironic isn't it ;-)
    Not to mention we NEED HEALTHY PLANT-BASED FATS for optimum Brain and Nervous system function.
    According to my educated opinion,
    This recipe most certainly does meet the requirements of a healthy meal,
    so eat up , and Bon Appetit !

    That's got to be an error-- olive oil and olives don't equal 40 grams of fat per serving...

    This looks like a GREAT dish-- I'm looking forward to giving it a go!

    The listed fat grams per serving is WRONG. The entire recipe only has about 55 or so grams of fat (olive oil olives) so in cannot be 40 per serving, more like 14 per serving.

    who cares about the fat content when you can eat it up. Sounds so yummy, gives you the strength to run the extra mile to enjoy this once a month or so. Will try it, will love it and will serve it. : )!

    Yea, cooking the potatoes in inch of water confused me!! I just cooked them in water until they were soft. I think I overcooked them a little bit, not bad though. It came out tasting great. Husband love it. Will do it again... Its a winner!

    you can't boil 2 pounds of potatoes in an inch of water, When I boil potatoes they all are covered with water.
    Maybe it works but doesn't sound like it would,oh well.

    That sounds horrible but then I don't like Northern food. It is either tastless or else the taste and or spices are completly out of balance.
    You should print these kind of receipes for those people and have good Southern receipes for our people. However, I do like other kinds of food from other places; just not Northern receipes. Yuk.

  • Fat content IS correct

    Aside from a few carb/protein calories from the potatos,etc, the calories in this salad come from fat. 40 grams is accurate per serving based on 4 servings from the salad. There are 9 calories per fat gram so at 40 grams per serving, 360 calories come from fat. It doesn't make this a bad dish to eat since olives and olive oil are great fats to eat, but something to be eaten in moderation and in balance with other foods.

    People and their hangups about fat content. Obviously, you haven't tried the dish, or you wouldn't be commenting about the fat content. If you don't want to even try it because of that, then WHY are you commenting??? Anyway, I am with the person who said "who cares about the fat content." Because I don't, and this dish is fairly good. It has to have some fat content to actually taste good.

    40 g of fat is a little ridiculous. You can easily cut the fat by halving the olives and using about 1/8 cup of olive oil and 1/2 cup of chicken broth to make the vinegrette, or you can substitute fat free yogurt for the olive oil all together, add a little chicken broth, and make it a sour cream based potato salad. I just saw on the front page that they are now putting kids on cholestrol lowering drugs. Americans have to stop thinking that we can eat anything with no consequences just because it tastes good.

    I care and probably everyone with a history of heart disease cares. Its a matter of HEALTHY eating not just EXERCISING. Fat is fat, no matter how many miles you run/walk/jog and with age that fat can cause major issues in your arteries. I keep my fat between 10 and 20g a day and my cholesterol under 100mg a day. This recipe is a no-go.

    When I read the recipe, I thought it sounded pretty good. But 40g of fat for one serving of a side dish is absolutely crazy! I didn't (and won't) try it because it's just not a healthy recipe.
