1. Ingredients

  1. 5 slices bacon
  2. 2 tablespoons extra-virgin olive oil
  3. 1 medium onion, finely chopped
  4. 8 large eggs
  5. 1/2 cup grated Fontina cheese
  6. 2/3 cup crumbled goat cheese
  7. 1/4 teaspoon salt
  8. 1/8 teaspoon pepper

2. Cooking Directions

  1. Preheat the oven to 325 degrees F. In a large skillet, cook the bacon over medium heat, flipping once, until cooked but not crisp. Drain on a paper towel, then chop into bite-size pieces.
  2. Pour off the bacon fat and add 1 tablespoon of the olive oil to the skillet. Add the onion and cook over medium-low heat until softened, about 7 minutes. Let cool.
  3. In a large bowl, beat the eggs. Add the onion, the bacon, the cheeses and the salt and pepper and stir gently. In a 9- or 10- inch ovenproof skillet, heat the remaining tablespoon of olive oil (swirl the oil to coat the bottom and sides of the skillet). Add the egg mixture and cook over medium-low heat until the sides start to set, about 3 minutes. Bake in the oven until the frittata is firm, 20 to 25 minutes.
  4. Gently run a rubber spatula around the sides of the skillet to loosen the frittata. Place a serving plate over the skillet and carefully flip the pan to release the frittata.

Yield: 6 servings

    I just loved this recipe. I made it a second time and added baking powder and baking soda and it puffed up and was even better. I think the comment about the person who got the runs must be either allergic to eggs or has dirty pans and a dirty kitchen. I just love Rachael Ray and her helpful cooking recipes.

    I think it just goes to prove, to each their own! The previous poster hated it, we loved it! My nephews needed something after hockey, and I am always trying to give them something new, to expose them to new tastes. This went over very very well, and honestly, I loved the ease of preparation too. Since I first found the recipe, it's become one of our family regulars!

    I would've given it 3 stars, but I'm a cheese-lover, and the excellent use of cheese in this recipe has caused me to-bump my score up to 4 stars. The other person who reviewed it, gave it a low score based upon the fat content (etc). But this is not a health-food forum. It's all about the taste. That person seems like the type of person who would probably NOT eat a cheese-steak hoagie, because it's not healthy. Yet there are many cheese-steaks eaten in this nation (and others too) on a daily basis. Why? Because they taste good. I think anything which tastes good, such as this Bacon and Cheese Frittata, should get a good review, regardless of how healthy it is (or isn't).

    frittata . or small egg omellet. great for after u had a big night out, or a morning socialiseing with family or friends.

    all realy you have to do is adjust the recipe by half less oil and find a suitable skillet to fry it in , light and thin under the salimader to crisp up the bacon and then roll it, maybe with a type of aoli sauce to accompany, it would be great!!

    Uugggg....just thinking about it makes my stomach gurgle. This recipe is way too high on the fat and grease list. 8 eggs, 2 types of cheese, bacon???? I'm sorry I made this. Unless you have a stomach made of iron, I would not recommend this dish.
