    I'm not Mexican but my hubby is... My mother in law cooks very healthy Mexican food and if there is one thing I learned it is that you don't need all that bacon fat... In fact we don't use any when we prepare the beans this way, toss the beans with some of its juice and warm them up and smash them with no fat or oil at all. As for preparing the tortillas if you don't want to fry them in oil, baking them till they are toasty works (I like flour), or buy premade tostada shells. Egg Beaters are a great alternative to the eggs..a lot healthier and omit some of the cheese...
    Trust me there are more ways to alter this meal and still get tons of flavor... I agree this version is not at all healthy....

  • Huevos Rancheros the correct way

    You got the right ingredients, but the procedure is too complicated, you don't have to go through so much trouble to make hevos rancheros.
    This is how I make them:
    1. Fry two eggs and put them on a tostada (or fried tortilla, it is almost the same thing although tostadas are less greasy )
    2. Top them with simmered salsa
    3.Serve with re fried beans and pico de gallo on the side.
    4. and enjoy.
    By the way:
    Anna your version is what we call Huevos Ahogados back in Mexico, not huevos rancheros. You have it wrong, to us in mexico Huevos rancheros are fried eggs on a tostada covered with any kind of sause
    Beside; your resipe is totally pocha not at all Mexican. What is Ortega? We don't even use canned beans or salsa in autentic Mexican cuisine. How dare you use the words ethnically correct. Ortega should be an American brand I think. Because I never heard of it in the 30 year I lived in mexico.

    Try this instead:

    Fresh salsa

    Boil a couple of tomatoes and a couple of jalapenos till cooked or use canned tomatoes but without the juice. Put in blender and blend to your liking, chunky or smooth. If salsa is too thick, add a bit of water. Salt to taste. Set aside.


    Fry your eggs in oil or use non-stick cooking spray of choice.

    Forget the fried corn tortillas. Just heat up a couple of flour tortillas on a hot skillet. About a minute on each side or longer if you want them a bit crispy.

    Serve eggs with non-fat refried beans and a piece of ham (or bacon if you prefer) on the side.

    Pour salsa over eggs and enjoy!

    Try it! It's a very easy recipe and its really tasty.

    This is a terrible recipe and not even close to the way this dish is made. Try this, if you cook you can figure it out. Here is my own which is ethnically correct!

    use a frying pan
    two tablespoons of olive oil, add chopped green onions, maybe half a stalk, one diced tomato a can of hot ortega chopped green chile, oregano, salt, pepper , piece of garlic. fry it up! Add water (about 1/2 cup) and let it cook to a boil

    Poach your egg in this and eat it with a nice corn tortilla that is warmed and NOT FRIED!!!

    If you want to jazz up the chili you can cook up diced pieces of beef, let this fry in the olive oil and then add the other ingredients!

    boil your own pinto beans from scratch and place them next to your huevos rancheros.

    Why the americans have the wrong idea about our food always...? I mean I love Rachael Ray?s Show but this recipe is not even a little bit closer about what it is in the mexican kitchen...

    First, the recipe has a lot of calories, it?s true, even here in Mexico, ?cause is a meal for working people, country people, many times we had the wrong idea that greasy food give us energy, WRONG!!!

    Sorry, but Rachael Ray has no idea about mexican sauces, to make a sauce you need more than tomatoes and chili?s, and specially in this kind of recipe, it needs many kinds of dry chili?s, garlic, herbs, seasoners and more, so excuse me Miss "I?m the new Martha Stewart"...

    I hope you to know that this don?t have anything against american people or american cuisine but I think that if Rachael ray is going to give a recipe, she should have more criticism...

    This recipe is labeled quick. It sounds complicated when I read it. As soon as I see the word blender it's complicated. Remember, you've got to clean that stuff also.

    Wanted to send out a special thank you to the ladies that gave corrections/variations on this recipe. Have made a kitchen test and your versions far surpass the recipe offered here. I love Mexican food so much, but it is almost non-existent where I live, so the opportunity to see authentic recipes (and ESPECIALLY from someone' grandma,lol!) is deeply appreciated!

    OK SO APPERANTLY NONE OF YOU ARE MEXICAN AND THEREFORE CANNOT COOK OR "TRY" TO COOK HUEVOS RANCHEROS EVERY SINGLE REVIEW I HAVE READ IS TOTALLY INCORRECT. SO HERE GOES THE ORIGINAL WAY ITS MADE!

    FIRST YOU MAKE THE EGGS OVER EASY AND THEN YOU MAKE A SAUCE THATS CALLED "RANCHERO SAUCE" AND THAT CONSISTS OF ONIONS, TOMATOES, AND JALAPENO, YOU PUT ALL THOSE IN A FRYING PAN ADD SOME WATER AND SALT AND PEPPER AND WAIT FOR IT TO GET SAUCEY. AFTER THAT YOU PUT YOUR EGGS ON A PLATE AND ADD THE RANCHER SAUCE ON TOP OF THE EGGS. TO GO WITH THAT YOU CAN ALSO MAKE FRIED POTATOES AND REFRIED BEANS. AND THATS THE WAY YOU MAKE THIS IS THE AUTHENTIC MEXICAN WAY AND REGARDING THE CALORIES WHO CARES IF IT TASTES GOOD THERES NO PROBLEM

    Honestly, the first review is someone who recommends utilizing the "ethnically correct" bottle of Ortega. I'm voting five stars just to undue the effect of some morons who post here. Mexican food is unhealthy and has lots of calories, and if you don't like it move onto the next recipe and don't vote until you die thin and unhappy.

    I always love to read the recipes on Yahoo for a laugh from time to time. I was not disappointed with this offering. It's loaded with fat from bacon grease, cholesterol from eggs and calories from frying. Being a personal trainer I have to put in my word. Take my advice; avoid this for breakfast at all costs. (In fact, I suggest, avoiding ALL animal products such as meat, dairy, etc to my clients.) Your health is much too valuable to risk eating this heart stopper.
    If you want a hearty, flavorful and healthy alternative, try this instead. A bowl of hot oatmeal with warmed fruit and honey puree on top with a half of whole-wheat bagel (dry). While it may not have the flair of huevos rancheros, your arteries and your gut (or lack of one) will thank you in the future.

    I just scramble a few eggs with some cheddar cheese, spoon over thick yellow corn chips, and top with salsa. It's messier to eat, but much quicker to prepare.

    My mother in law cooks Mexican and simple.
    Diced up tomatoes, onions, 2 jalapenos chiles (sometimes she adds bell peppers). In a warm frying pan add a little oil to coat, put in the tomatoes, onion, chiles, stir fry lightly, add 1 can tomatoe sauce, garlic salt, pepper to taste. Stir till hot.
    In another frying pan add oil, put in your corn tortilla, fry till just soft put onto a large plate. we use 3 tortillas to a serving. Fry 2-3 eggs over easy or how ever you like your eggs, put on top of corn tortillas, add the the hot chile mixture over that....and ENJOY...Simple too.

    I love heuvos rancheros, and would have loved to try this recipe, but when I saw the calorie count per serving I said forget it! For the average woman, that would be about it for the day - looks like iceberg lettuce (no dressing) for dinner. I thank the other reviewers for their lower fat lower cal alternatives - I will try some of those!

    First of all Huevos Rancheros ARE made with fried corn tortillas. and that entry about supposed real authentic recipe I knew was gonna be wrong when I saw that it uses Ortega, lol. Definitely not authentic. I dont know of one authentic Mexican dish that poaches an egg either. I think your talking about Tex-Mex which is different than authentic Mexican. Tex-mex is "Americanised" (dont know if thats spelled correctly) Mexican food. And using Ortega is a prime example.
    Sorry, Im from Mexico, born and raised and I know what Im talking bout. Rachel Rays was actually a very good recipe, especially like that she included roasting the tomatoes and then peeling! Now thats not some Americanized Tex Mex. The average American wouldnt spend that much time and effort...they'd just buy Ortega, hahaha.

    You can spray the tortillas with cooking spray and broil them for about 5 minutes on each side. You don't have to fry everything- you can use cooking spray to make your eggs- instead of butter. You can warm up the beans they don't need to be fried and still taste great- the sauce has lots of flavor!

    This recipe can't be right, 3 cups of vegetable oil? Unless Heuvos Rancheros come deep-fried, i think they made a mistake typing this one in.

    I haven't even made the dish but it sounds like a winner to me. But this comment is mainly towards the reviews it received complaining about the authenticity of this recipe. Rachel Ray is not Mexican. Nor did she claim to be. If any of you watched her programs on tv you'd know she takes certain classic recipes and puts her own spin on it. She makes it her own. If she wants to put cheese in a recipe that doesn't normally call for it let the woman put cheese in it. And if it tastes good to her then why give her grief about it? Noone is forcing you to review this recipe at gun point. So resist the urge to bash a recipe you HAVENT tried yet. And yeah if you had read down about the oil..its for basically deep frying the tortillas to make them crispy. Yeah, she's going to make you guzzle 3 cups of oil.

    The 3 cups of oil is for frying the tortillas. If your oil is hot enought the tortillas will only obsorb a small amount of the oil, so you can pretty much subtract about 1500 calories per serving.

    I don't even have to taste this to base my opinion, Calories are outrageous and just for ONE SERVING? OMG, I know Rachel Ray didn't make this her recipe, most of her meals are "figure friendly" I love Rachel Ray, but she needs a little kick in the butt for this one
