  1. 1 1/2 pounds plum tomatoes
  2. 3 garlic cloves, finely chopped
  3. 1/2 cup finely chopped onion
  4. 1 jalapeno, seeded, finely chopped
  5. Salt
  6. 3 tablespoons vegetable oil
  7. 3 tablespoons rendered bacon fat (or vegetable oil)
  8. 1 (15 ounce) can black or pinto beans, with their juice
  9. 3 cups vegetable oil
  10. 8 (6 inch) corn tortillas
  11. 2 tablespoons unsalted butter
  12. 8 large eggs
  13. 1 cup shredded mild Cheddar cheese
  14. 1 cup cilantro, chopped

Cooking Directions

  1. Preheat the broiler. Place the tomatoes on a sheet pan under the broiler and cook, turning frequently, until the skins are charred on all sides, about 10 minutes. Transfer the tomatoes to a plate. When cool enough to handle, peel and roughly chop.
  2. Place the tomatoes, one-third of the garlic, half the onion and the jalapeno in a food processor and pulse about 6 times, until combined but not pureed. Season to taste with salt.
  3. Heat 3 tablespoons of the vegetable oil in a large skillet over medium-high heat. Add the tomato mixture and cook, stirring occasionally, for 5 minutes. Transfer the sauce to a microwave-safe bowl and set aside.
  4. Wipe out the skillet and heat the bacon fat over medium-high heat. Cook the remaining onion and garlic until they begin to brown, about 5 minutes.
  5. Raise the heat and add about half of the beans and their juice to the skillet. Coarsely mash the beans in the skillet with a potato masher or the back of a large spoon. Mash in the remaining beans and cook for 5 minutes. Season to taste with salt. Transfer the refried beans to a microwave-safe bowl and set aside.
  6. Fill a large skillet with half an inch of vegetable oil and heat the oil over medium-high heat until it ripples. Fry the tortillas, 2 at a time, turning once with tongs, until blistered and golden brown, about 2 minutes per batch. Drain them on paper towels.
  7. Reheat the tomato sauce and the refried beans in the microwave. Spread 2 to 3 tablespoons of the beans on each tortilla. In a large nonstick skillet, melt the butter and cook the eggs, either scrambled or fried. When finished, divide them among the tortillas. Garnish with the shredded cheese, tomato sauce and cilantro.

    I'm not Mexican but my hubby is... My mother in law cooks very healthy Mexican food and if there is one thing I learned it is that you don't need all that bacon fat... In fact we don't use any when we prepare the beans this way, toss the beans with some of its juice and warm them up and smash them with no fat or oil at all. As for preparing the tortillas if you don't want to fry them in oil, baking them till they are toasty works (I like flour), or buy premade tostada shells. Egg Beaters are a great alternative to the eggs..a lot healthier and omit some of the cheese...
    Trust me there are more ways to alter this meal and still get tons of flavor... I agree this version is not at all healthy....

    You got the right ingredients, but the procedure is too complicated, you don't have to go through so much trouble to make hevos rancheros.
    This is how I make them:
    1. Fry two eggs and put them on a tostada (or fried tortilla, it is almost the same thing although tostadas are less greasy )
    2. Top them with simmered salsa
    3.Serve with re fried beans and pico de gallo on the side.
    4. and enjoy.
    By the way:
    Anna your version is what we call Huevos Ahogados back in Mexico, not huevos rancheros. You have it wrong, to us in mexico Huevos rancheros are fried eggs on a tostada covered with any kind of sause
    Beside; your resipe is totally pocha not at all Mexican. What is Ortega? We don't even use canned beans or salsa in autentic Mexican cuisine. How dare you use the words ethnically correct. Ortega should be an American brand I think. Because I never heard of it in the 30 year I lived in mexico.

    Try this instead:

    Fresh salsa

    Boil a couple of tomatoes and a couple of jalapenos till cooked or use canned tomatoes but without the juice. Put in blender and blend to your liking, chunky or smooth. If salsa is too thick, add a bit of water. Salt to taste. Set aside.


    Fry your eggs in oil or use non-stick cooking spray of choice.

    Forget the fried corn tortillas. Just heat up a couple of flour tortillas on a hot skillet. About a minute on each side or longer if you want them a bit crispy.

    Serve eggs with non-fat refried beans and a piece of ham (or bacon if you prefer) on the side.

    Pour salsa over eggs and enjoy!

    Try it! It's a very easy recipe and its really tasty.

    This is a terrible recipe and not even close to the way this dish is made. Try this, if you cook you can figure it out. Here is my own which is ethnically correct!

    use a frying pan
    two tablespoons of olive oil, add chopped green onions, maybe half a stalk, one diced tomato a can of hot ortega chopped green chile, oregano, salt, pepper , piece of garlic. fry it up! Add water (about 1/2 cup) and let it cook to a boil

    Poach your egg in this and eat it with a nice corn tortilla that is warmed and NOT FRIED!!!

    If you want to jazz up the chili you can cook up diced pieces of beef, let this fry in the olive oil and then add the other ingredients!

    boil your own pinto beans from scratch and place them next to your huevos rancheros.

    Why the americans have the wrong idea about our food always...? I mean I love Rachael Ray?s Show but this recipe is not even a little bit closer about what it is in the mexican kitchen...

    First, the recipe has a lot of calories, it?s true, even here in Mexico, ?cause is a meal for working people, country people, many times we had the wrong idea that greasy food give us energy, WRONG!!!

    Sorry, but Rachael Ray has no idea about mexican sauces, to make a sauce you need more than tomatoes and chili?s, and specially in this kind of recipe, it needs many kinds of dry chili?s, garlic, herbs, seasoners and more, so excuse me Miss "I?m the new Martha Stewart"...

    I hope you to know that this don?t have anything against american people or american cuisine but I think that if Rachael ray is going to give a recipe, she should have more criticism...
