  2. 1/2 cup freshly grated Parmesan cheese
  3. 1 (6 ounce) package baby spinach
  4. Olive oil
  5. 3 plum tomatoes, chopped
  6. 4 ounces goat cheese, crumbled

Cooking Directions

  1. Preheat the oven to 400 degrees F. Spread the dough on a baking sheet and sprinkle with olive oil and the Parmesan. Bake for 8 minutes. Toss the spinach with olive oil. Top the crust with the spinach, tomatoes and goat cheese. Drizzle the pizza with more olive oil and bake for 15 minutes more.

    Go easy on the goat cheese. Test it out and see if you like it before you go happy with it on the pizza.

    I actually found it to be very good and very quick to make (I mess up things out of the box, so if I think it's quick, then it must be). I wasn't sure from the ingredient list whether to buy fresh or frozen spinach. I bought frozen just because I was't planning on making it for a week, and it tasted great. I just found the tomatos a little too sweet. Next time I'll either use fewer or none at all.
