  1. 4 teaspoons mild to medium-hot chili powder
  2. 1/2 teaspoon ground cumin
  3. 1/2 teaspoon ground coriander
  4. 1/2 teaspoon ground ginger
  5. 1/4 teaspoon Chinese five-spice powder
  6. 2 teaspoons coarse salt
  7. 3 tablespoons extra-virgin olive oil (optional)

Cooking Directions

  1. In a small bowl, combine all of the ingredients and stir until smooth. The rub can be refrigerated in a covered container for up to 2 weeks.
  2. Massage this rub onto meat, poultry or fish and allow it to marinate for at least 1 hour before cooking.

    Your recipe is good but could use some Strawberry Hill wine flavored into it to give it a 5 stars restaurant taste.

    Cumin kills it, right there. I hate the taste of cumin. And what on earth is Chinese 5 spice powder doing in this recipe? Definitely NOT "yummers", Rachael.
