Curried Chicken Salad with Broccoli and Dates

  1. 1 tablespoon vegetable oil
  2. 1 whole skinless, boneless chicken breast
  3. Salt and freshly ground pepper
  4. 3/4 cup broccoli florets
  5. 1/3 cup mayonnaise
  6. 1 tablespoon cider vinegar
  7. 1/2 teaspoon curry powder
  8. 1/2 Granny Smith apple, chopped
  9. 3 dates, pitted and finely chopped
  10. 2 celery ribs, thinly sliced
  11. 2 pita rounds

2. Cooking Directions

  1. Heat the oil in a medium skillet over medium heat. Season the chicken breast on both sides with salt and pepper and cook, until lightly browned and cooked through, about 5 minutes on each side; let cool.
  2. Meanwhile, bring a small saucepan of salted water to a boil, add the broccoli and cook until crisp-tender, about 5 minutes. Drain, rinse under cold water and set aside.
  3. Chop the chicken and broccoli into bite-size pieces. In a large bowl, whisk together the mayonnaise, vinegar and curry powder. Add the chicken, broccoli, apple, dates and celery, and toss. Season to taste with salt and pepper and serve with pita.

Yield: 2 servings

  • TYPES OF FAT MATTER

    Yes, it has 37 grams of fat, BUT it's veggie oil. If you like use o-mega 3 oils or canola. Those have the highest concentration of monounsat fats in them which is actually WONDERFUL for the body. You can't group all types of fats together, just like you can't group all types of sugars together. Same with carbs; carbs are not carbs are not carbs. There are simple carbs, complex carbs, etc. It's not enough to just read the nutritional info to base a heathly decision on. Sure it's a decent outline, but something with 0 fat can be much worse for you than something that contains fat. Consider the ingredients list for an accurate perception of what your actually consuming. More often than not your "diet" foods are actually "DIE - T" foods.

    This is a recipe I will make again and again. However I used EVOO to cook the chicken and low fat mayo for the dressing to lower the fat
    grams.

    Yahoo didn't call it a healthy meal, they called it a quick meal. Rachael is amazing, and I'm definitely going to try this salad soon! I'm giving it 5 stars just because it sounds so tasty and easy....

    For those of you who worry about the FAT in this recipe guess what I did? I had some left over chicken breast in the refrigerator that I had baked the evening before. I used that instead of frying it as suggested in the recipe. I used low fat mayo also!! It was great!

  • Good summer dinner salad

    This recipe caught my attention, so I had to print it out. Gonna try it tomorrow night as the main dish. Leftovers will be my treat the next day for lunch.. My daughters and I love to watch Rachel Ray. I immediately said to K. "no evoo?". I see that one viewer reported changing to evoo from veg oil then bringing the dressing down with red. fat mayo.


    Rachel never claimed that this was a low fat recipe. But it is a nice protein and carb filled meal, and is nicely balanced. It sounds like a winner to me with another salad of greens on the side and some crackers.

    People that complain about fat are the same freaks trying to boycott Oreo cookies in our school cafeterias. Before you know it there will be a surgeon general's warning on sugar wafer cookies, which I love. Eat at you own hipline's risk. Sounds comforting.
