I am on a limited fat and cholesterol diet. I chose to crush a cup of baked chips for the crust and make it sort of a fritata. Change out the eggs for egg beaters and 2 egg whites. I used fat free cheese and sour cream. Put a little cumin in with the seasonings and it\'s delicious. Leave out the fat and spice it up. YUM.

With a bottle of red wine, this dinner was outstanding!! We chose to substitute a Mexican 4 cheese blend in place of the cheddar and Jack, which gave it even more flavor. This is a great simple dinner and would be perfect as a late morning brunch entree. This will become a staple in our home.

What can I say.....this Quiche was the bomb!. I had to host a brunch at work and I served this alongside a platter of fruits, Homemade strawberry Fluff Fruit dip and a assortment of breakfast danishes and my co-workers are still talking about this Quiche! I subsituted the chicken with broasted chicken and added the tips of 3 green onions and 1 half of cup of Mexican Taco Cheese. Let\'s just say that this is definitely one you would want to try. Cut up turkey Link Sausages are also a good idea to add if you don\'t want the Chicken. Also, another good idea is to remove the crust, double the recipe and bake in a 13 X 9 baking dish. Cut Quiche into strips, inside of the pan, and serve each strip with a warm tortilla, top with Salsa and sour cream for a breakfast Quiche Taco! There are so many variations to serving this recipe and my ideas are just getting started! Definitely a winner in my house!

A friend from work gave me this recipe. I took it home and made it and brought it to work the next morning. LOVED IT! Along with everyone else in the office. It really did taste just like chicken enchiladas! I, too, substituted Mexican cheese blend for the Monterey Jack. I will make this again anytime! Very simple.

Quiche is primarily an egg dish and the eggs in this one get totally lost in all the fat and goo. I found it much tastier by increasing the number of eggs, decreasing amount of cheese and tortilla chips and using fresh salsa with chiles.

i added some mushrooms and black olives to it and used the 4 blend mexican cheese. it went fast lol, going to have to make 2 next time. this and a nice salad and you have a meal fit for a king. very easy to make

To cut back on fat calories, I used about half of the recommended amt of cheese, and slightly less chips. I have made it with Mexican 4 cheese blend as well and it\'s great. Tastes like chicken enchiladas, but has a firmer consistency (not as messy)! Great dish for entertaining, just pop it in the oven. Another healthier option: Use a whole wheat pie crust- can find it in the frozen section of Whole Foods Mkt.

After one bite he melted into "Mmm\'s" and "Oh Honey\'s" and muttered something about a "Smorgasbord of Flavor." Needless to say, he asked me to repeat this.
It does taste like chicken encliladas, just without the gooey cheesiness or greasiness. The flavors are very vibrant and somewhat surprising for so few items. This quiche is less quiche-like than I imagined it would be, probably because there are only 4 eggs in the recipe, but it still has a very light texture.
Prep:
This quiche could not get any easier to prepare. I am not a fan of cleaning up after cooking and again after eating, so this dinner was a snap. I came home from work and unwrapped the pie crust, placed it in a pie dish, threw the ingredients in a bowl and scooped them into the crust. Then, because it\'s my husband\'s job to watch the baby while I\'m fixing dinner, I took a 45-minute nap while it baked. The quiche is just gorgeous and it looks like you spent all day crafting it.
Ingredients:
I used half Mexican cheese blend and half Mozzarella, just because that\'s what I had in my fridge. Pace picante sauce for the salsa, and 1 1/2 c. canned chicken translated to one whole big can of Sweet Sue white meat chicken breast. I made sure to break up the chicken really well so the flavors permeated the meat and I didn\'t end up with a briney nugget in my mouth - I like it shredded like in my enchiladas. Used 2% milk instead of half. Left chips in good size pieces so they didn\'t disintegrate. Otherwise as directed.
Hint: Don\'t skip the green chilies - they are the kicker!

We made this and couldn\'t believe how good it was! We also used a four cheese Mexican mix but other than that made no substitutions.

I tried this recipe out on a couple of girlfriends and we all loved it! I can\'t wait to make it for my husband. It tastes like I slaved over the stove for hours, and it was SO EASY! Great recipe.
