1. Ingredients

  1. 1 (13.8 ounce) can Pillsbury(R) Refrigerated Pizza Crust
  2. 6 eggs
  3. 1/4 teaspoon salt
  4. 1/8 teaspoon pepper
  5. 1 tablespoon butter
  6. 1 cup julienne-cut strips or chopped cooked ham
  7. 1 (4.5 ounce) can Old El Paso(R) Chopped Green Chiles
  8. 1 1/2 cups shredded Monterey Jack cheese or hot pepper Monterey Jack cheese
  9. 2 tablespoons chopped fresh cilantro (optional)

2. Cooking Directions

  1. Heat oven to 425 degrees F. Grease 14-inch pizza pan. Unroll dough; place in greased pan. Starting at center, press out dough to edge of pan. Bake at 425 degrees F for 6 to 8 minutes or until crust begins to brown.
  2. Meanwhile, in medium bowl, combine eggs, salt and pepper; beat well. Melt butter in large skillet over medium heat. Add eggs; cook 1 to 2 minutes or until firm but still moist, stirring frequently.
  3. Remove partially baked crust from oven. Spoon and spread eggs over crust. Top with ham, chiles and cheese.
  4. Return to oven; bake an additional 8 to 12 minutes or until crust is deep golden brown. Sprinkle with cilantro.

Yield: 4 servings
