I love this recipe and so does my husband. I did however make it my own by not adding the corn this time (don\'t like the sweetness with the spicy) and no rice (save the calories this ingredient is not needed). I minused the top layer of tortilla and added the cheese just before it was done. I have made this before following the recipe completely and like it much better this way. you do not need the top layer of tortilla if you add the top layer of cheese just before you remove the pie. It is sooo easy to make and wonderful to eat!

I made this recipe for the first time tonight and everyone really enjoyed it! Even my picky 2 year old loved and ate it!!! We will definitely be making this one again!!

I added a chopped bell pepper and used hatch enchilada sauce-- it was AWESOME. Everyone loved it and I will definately make this again. Maybe next time vegetarian! Also for the chicken, i bought the precooked southwest chicken strips that are for wraps and stuff- made it much easier than having to cook the chicken and added great flavor. Can\'t wait to make it again! Oh- and leftovers were good too!

I have 2 young children whom are picky eaters and they loved this dish!
I only changed it a tiny bit. I don\'t like salsa, so I used taco sauce and instead of cooking chicken, I used frozen diced chicken and just let that thaw first.
Also, the middle was not hot, so I put my casserole dish in for an extra 15 minutes and then it was fine.
I think this is a great dish and will be adding it to my quick and easy dishes for a great dinner!!!

You all need to know, that cooking is just not my gig. I\'m not even that good at baking either. So today at the last minute I ran to the store to get the ingredients followed the instructions. Preparation was minimal. When my husband heard this recipe was from the intenet, I got a the raised eyebrows and prepped myself for the whining. Well, I have to tell you my entire family loved this recipe, especially my husband!

This was truly an easy and delicious recipe and my husband is very picky...never likes quiches or soups or anything resembling a pie that isn\'t sweet but he LOVED this (and he always loves the other things I make). I added extra chicken, more low-fat cheese, and extra sauce for leftover! Cilantro would be great to add and olives!

This recipe was very tasty and my family loved it. I dont even care for salsa all that much and liked it. The only problem was for some reason the rice didnt cook and was still hard. I guess I did something wrong. Also it was 12 points per serving through weight watchers but by planning ahead I fit it in.

I changed this recipe with a few healthier choices, I used fat free cheese, whole wheat tortillas and wheat rice. I think you could have left out the corn I just added for color, green and red peppers also make it more coloful and healthy! It was a bit dry after baking so I added more sauces the 2nd time I made it. Otherwise very yummy, also I added chili pepper sauce and red pepper flakes we like it really flavorful!

Why do you have to cut the tortillia\'s in half? Why can\'t you just put two whole layers on the bottom and then just layer upwards as you go? I haven\'t made this yet, but want to. Not sure if I\'m understanding the layer thing. Can someone help???? Thanks!!!

I was just wondering whatever happened to enchiladas made with corn tortillas. Enchiladas are not made with flour tortillas. That is burritos or soft tacos. Can I please find an enchilada recipe that has corn tortillas like they are really suppose to have?

I didn\'t care for it at all. Overall it lacked flavor and heat. It doesn\'t get better with time either, the longer it sits, the more the rice and tortillas cooks, and the mushier it gets. You could avoid all of this by using green chile, not red, no rice and use corn tortilla instead of flower.

Just curious as to why the recipe is calling for reduced fat products... They usually aren\'t as flavorful! And I wonder if tofu could be substituted in place of chicken to make this a vegetarian dish...

Well, this is actually a racheal ray recipie changed a bit, i can make it even faster for you..as rach did.In a round casserole,i cut the frst tortilla to fit, I use 1 lb cooked ground beef and add a small jar of taco sauce, then add a small can of black beans, and a small can of corn kernals (no need to heat) right to the skillet with the beef. Then in my casserole, i just layer torilla, meat, and bagged shredded cheese (i use sharp cheddar), until i hit the top. I end with a tortilla and cheese. I put the lid on and heat for about 20 minutes to really melt the cheese and then i take the lid off and broil so the top gets golden. about 3 minutes. There will be extra meat which i save and use on a taco salad or just use another tortilla for a quick lunch. Not really novel, but it is a fave in my house!

I haven\'t tried this recipe yet, but it sounds delicious. Much easier than rolling enchiladas. I would love to try them for snack some evening at SJA BS. Will you bring them?

If only someone would finally catch on that we can go to a local joint and pick up take out that is probably healthier than this recipe. There\'s enough sodium in this recipe to be obscene. I don\'t want diet food but I do think this could be made much healthier.
