Well I haven\'t been a huge fan of tofu in the past, but thought I\'d give this a try! I was pleasantly surprised. I just used plain corn instead of the mixed corn, and I made my own enchilada sauce, because I don\'t like the canned kind. It was really good, and is definitely worth trying.

Fantastic! All Vegan, and I was able to do adaptations using different beans and ingredients as I live in the Caribbean.
