1. Ingredients

  1. 1 cup extra virgin olive oil
  2. 2 1/2 teaspoons crushed red pepper flakes
  3. 6 medium tomatoes
  4. 6 garlic cloves, crushed
  5. 1 tablespoon dried oregano
  6. 1 cup loosely packed fresh basil leaves
  7. coarse salt
  8. 1 pound pasta (fusilli or spaghetti)
  9. Parmesan cheese, for serving

2. Cooking Directions

  1. Make chile oil: Stir together 1/2 cup oil and 2 teaspoons red pepper flakes. Let stand at room temperature at least 2 hours or up to 2 days.
  2. Make sauce: Core tomatoes and tear into bite-size pieces directly into a serving bowl. Add garlic, remaining 1/2 teaspoon red pepper flakes, the oregano, basil, 1 1/2 teaspoons salt, and remaining 1/2 cup oil. Lightly crush together using a wooden spoon. Let stand at room temperature 1 to 8 hours.
  3. Bring a large pot of water to a boil; add salt to taste. Add pasta; cook until al dente. Drain. Add hot pasta to tomato mixture. Discard garlic cloves. Serve with Parmesan cheese for grating and with the chile oil for drizzling.

    you have to get REALLY GOOD tomatoes or this will taste blah. easy on the oil!! black pepper is good too if you don\\'t like heat of chili. it\\'s easier to just add pepper onto your own serving than make everyone suffer the burn!

    I thought this meal was pretty good, until I got finished. I had to take the biggest dump!! This reciepe tore my stomach up.

  • Tasty, but a little too spicy for my family

    While I enjoy spicy foods, my family do not. Even though I cut the amount of red pepper flakes in this recipe by 1/3, it was still too spicy for family.

    Otherwise, I\\'ll try making a variation of this next time.

    It\\'s pretty spicy. I like it this way, but some other people don\\'t. Could stand to at least halve the red pepper flakes. Other than that it was very good and very easy to make!

    I halved the amount of oil. I mixed 1/4c of oil with the pepper flakes and let it sit while I roasted the garlic with the remaining 1/4c of oil. I strained the pepper oil onto the pasta... then pour the warm garlic oil over tomato\\'s, let them sit about 20 mins before combining... delicious!
