Cooking Directions

  1. Preheat oven to 225 degrees F. Warm eggs in bowl of hot water, 5 minutes. Separate whites; reserve yolks for another use.
  2. In bowl of electric mixer, beat whites with salt, cream of tartar, and vanilla to soft peaks. Add sugar by the tablespoon, beating until stiff, 2 minutes more. Fold in chocolate chips.
  3. Drop scant 1/4 cups of meringue onto parchment-lined baking sheets. Bake until dry, about 1 hour. Let cool.

Yield: 30 servings

    It\'s too bad they don\'t mention the original date of this recipe since I sent in a nearly identical recipe to this one for a martha stewart cookie contest many months ago. It\'s good with plain chocolate chips, but we make it with mint chocolate chips and a little green food coloring at Christmastime. Rather than baking the cookies, you can preheat the oven to 325, put the cookies in and turn off the oven to let them bake overnight. Putting them on tin foil makes them less likely to stick to the pan.

    My mother always made them on Christmas Eve and occasionally, she still does. The recipe we used used chocolate chips and walnuts. Excellent.
