Roast Pork Loin with Mushrooms and Tomatoes

1. Ingredients

  1. 1 pound plum tomatoes, cut into thick wedges
  2. 1 pound small button mushrooms, stems trimmed
  3. 5 cloves garlic, halved
  4. 1 tablespoon olive oil
  5. Coarse salt and ground pepper
  6. 1 (2 1/4 pound) boneless pork loin
  7. 1 1/2 teaspoons ground cumin
  8. 1 1/2 teaspoons ground coriander
  9. 1 teaspoon dried oregano

2. Cooking Directions

  1. Preheat oven to 425 degrees F. In a 9-by-13-inch baking pan, combine tomatoes, mushrooms, garlic, and oil; season with salt and pepper. Toss to coat, and move mixture to sides of pan (leaving center free).
  2. Sprinkle pork with 1 teaspoon salt, 1/2 teaspoon pepper, cumin, coriander, and oregano, rubbing mixture in. Place pork in center of pan.
  3. Roast until meat registers 160 degrees F on an instant-read thermometer and mushrooms are tender, 45 to 50 minutes. Remove from oven.
  4. Cut off a third (10 ounces) of the pork loin, and set aside for making pressed pork sandwiches. Slice remaining pork, and serve with tomatoes, mushrooms, and any pan juices.

Yield: 4 servings

Note

In step 2, you can use a tablespoon of mild chili powder in place of the cumin and coriander.

To store, let cool, cover with plastic wrap, and refrigerate until ready to use.

    I prepped this meal then went to the gym leaving my husband alone to keep an eye on it.

    It came out super moist and bursting with flavor. I am a fan of fresh mushrooms and my husband isn\'t so I quite enjoyed having more of these tasty bites to all myself.

    My only complaint is that my dish didn\'t look as pretty as the picture, the tomatoes didn\'t hold their form as well as the pictured tomatoes but they were, as the mushrooms, full of flavor. It\'s hard for me to describe the taste other than savory perhaps.

    This recipe has three things I often look for: quick, easy, delicious!

    I am not a natural when it comes to cooking, but I had a pork loin in the fridge and this recipe caught my eye. It is very easy to prepare and cook. The mushrooms and tomatoes turn out quite tasty and the pork is excellent. The mix of spices for both the vegetables and the pork are easy to prepare. Easy to make and great to eat!
