I LOVEEEEEEEE THIS RECIPE!. I just had to change a few things to get the caloric and sugar down a bit. QUITE A BIT in fact. First of all i used egg beaters instead of a whole egg. i used "whole grain sugar free bread", instead of any other bread and it has more fiber and bumps up the fiber grams. You can also use whole grain bread crumbs as well. Instead of using High sugar ketchep, you can use a low sodium low sugar kind which they have at specialtiy food stores.Last but not least, I used "fat free/ low sodium parmesan cheese instead of whole fat and High sodium cheese. The fat free cheese is a little tricky to work with BUT IT DOES WORK! Try this recipe your going to love it. I hope that Martha will read this and print it in her wonderful Food magazine. Its so worth It.

i make this all the time. instead of ketchup, i use honey bbq sauce. i mix about 2 tablespoons of sour cream and use seasoned bread crumbs in the mixture. these are my own little touches and my kid loves it!

Try substituting the bread with oatmeal in addition to the more healthy suggestions from the other reviewers.

This is an excellent recipe!! The muffin tin idea was novel to me and I really enjoy new twists on old favorites. Of course I had to add my own flares. I agree with William on using oatmeal instead of bread and have always done my meatloafs like that. Another addition was instead of mixing the cheese throughout, I like to make it a "stuffed" loaf with a layer of cheese (and/or mushrooms/peppers/asparagus or what ever else you have in the fridge) in the middle. With the muffin tins it makes it more like a treasure in the middle. It\'s a great way to incorporate more veggies in the meal.

Wow...this recipe is extremely tasty. I was a bit hesitant to try at first due to the ingredients. Afterall, who puts pickles in their meatloaf? (no need to answer that, I\'m sure it\'s been done before)
So, I went out and bought a brand new meat thermometer just for this recipe. One word: Delicious!
My kids loved this recipe as well, and for as picky eaters as they are I didn\'t tell them that I substituted oatmeal for the bread, added a entire chopped pickle and added some dried parsley to the mix. It didn\'t matter...they loved this recipe.
Also, I recommend doubling this recipe and utilizing those muffin pans (you know you have them!) and you can freeze these convenient serving sized meatloaves for easy to prepare meals.

Not sure if someone already wrote this but I have seen recipes for turkey meatloaf where you put shredded zucchini that you saute quickly into the mix, great way to incorporate vegetables and keep the meatloaf moist, I use the oatmeal as well

If your were to saute some spinach with a little garlic, diced up some sundried tomatoes, and get your hands on some feta cheese, you have a great way to stuff your loafs!! Before puttting into the loaf pan, flatten them out like a burger and add a couple of Tbl. spoons of the mix to the center.fold up the sides and form into balls. Your loafs will have afantastic surprise in the center!!!

This was really yum-mo! I would reduce the pickles a little, but the pickle sure gave it a WOW kick! I also made it into a loaf and it took forever to bake. BUT! Well worth the extra time and anticipation.

this was phenomenal. my bf hates eating healthier, but he loved this and i used the oatmeal suggestion! i also loved the cupcake idea. it made them the perfect size. i think i may use tomato sauce next time instead of ketchup.

I use this recipe and add one cup finely minced carrots, (if you buy the matchstick cut at the grogery store it cuts your time for mincing them) then after they have baked for 35 minutes i add a mashed potato *frosting* to these cupcakes meatloafs put back in oven for 10 minutes and the kids go crazy for them!!

Now this recipe sound awesome, can\\'t wait to try it. Also an idea, wonder if using Heinz 57 (I love it) would taste like the old recipe that used to be on the back of the Heinz 57 bottle?
Oh and also, how much oatmeal for reading all the reviews...NO ONE ANSWERED THAT???

my first time making meatloaf ever...
definitely easy and quick to make.
had majority of the ingredients already at home.
would probably take out the salt portion entirely and just let the mustard powder do its thing.
i used relish in place of the chopped dill and it worked fine.
liked the cupcake tin idea-nice portion and easily served.

The topping doesn\\'t have to be just plain ketchup. Try a little ketchup, yellow mustard and a bit of brown sugar to mix it up a bit. Just play around with the ratio until you get it to your liking. There will be a little more tang and make the topping more interesting.

Instead of grainy fillers, use bell peppers and/or sweet banana peppers, sweet onions, and with Turbinado sugar sweetening the tomato paste. Southern fans might try molasses. Sea salt and white pepper to taste.
Okay, griller fans, take the Salisbury or meatloaf batter--use the muffin pan as a size suggestion, then flatten into patties for the grill.
And, for the real purists, let\'s go straight to the grilled/roasted turkey breast sprinkled with white pepper and sea salt
Mashed potatoes with goat\'s milk cheddar and/or butter for a true gourmet touch.

i had wieght loss sugery in dec and i had to find different recipes that i could eat .this recipe is one of the best ones so far . family members that i feed it to love it as well and they can\'t believe its turkey .thank you for the recipe and please keep them coming . looking all the time for good health recipes.

That sounds great - but this recipe is even easier when you are strapped for time.
I discovered it when I was losing weight on Weight Watchers last year and it was a lifesaver - I still use it. The leftovers were good for lunch the next day and it made it easy to calculate my points.
Ingredients:
1 lb extra lean ground beef (can use turkey, but it will be a little drier)
1 box Stove Top stuffing mix
1 cup water
2 egg whites
Directions:
Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.
Serve with ketchup on top, if desired.
Nutrition Information:
103 Cal., 1.8 g. fat, 0 g. fiber

I purchased 99% fat free turkey. I used wheat bread and skipped the ketchup...........used A1 marinade (it\'s very good and has 2 grams of sugar). It\'s a great protein source, and quite tastey!

This is a tasty recipe, I can tell by the aroma; I\'m a good cook and know by smell before I even taste things. I must admit I used ground beef, "market" cuts (to hold together better due to fat), because ground turkey has white meat in it, too bland. I used Ponzu instead of Worsteshire (sp?) sauce and lost the dill pickle I bought so, with all that, it\'s not exactly the same recipe. Oh, I also cut up abt. a tablespoon or so of fresh rosemary and threw that in. I think it\'s adaptable and a great mix of flavors, modified or not.
However, my cautionary is: underneath the muffin tin, DO USE A BAKING SHEET or something wider and longer than the tin to catch the drippings and pour them off intermittently. Aluminum foil, which I thought of later, would be too wobbly to withdraw properly and empty. The juiciness of the recipe, which is what makes it so delish, also makes it dangerous. I\'ve never had an oven fire but where there\'s smoke....my oven smoked 2/3 through the process, I had to turn it off to avoid a fire, and hope the heat cooked it the rest of the way, which I guess it did not. I could not afford an in-meat thermometer at this time.
I now have the tin covered in aluminum foil to conserve the rest of the heat and when it\'s cooled down I\'m going to refrigerate it, then take out the meatloaf "muffins" as I use them and put in a saucepan with lid on stovetop to heat through. Hope it doesn\'t alter taste too much but want well-cooked onions, garlic and ground meat.

tried this the other night but with a few changes. I didnt have any Worcestershire or dill so I skipped that part. Added two tomatos and used frozen spinach, with whole wheat bread. It came out very watery... was it the tomatos? or the spinach? Not sure but I thought it still came out great. Easy, simple, fast. Next time I will dry the spinach and tomato as much as possible.

I have to agree with all of you about the muffin tin....cool idea...and you are right, that is an awesome portion control idea. Never would have thought of it....I use oatmeal too, and instead of ketchup on top, tomato sauce and a little parsley works well, gives it a little zest.
