1. Ingredients

  1. 1 cup all-purpose flour
  2. 2 tablespoons sugar
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon salt
  5. 1 large egg, lightly beaten
  6. 1 cup milk
  7. 2 tablespoons unsalted butter, melted, plus more for sauteing banana slices
  8. 2 bananas, peeled and sliced into 1/4-inch-thick rounds

2. Cooking Directions

  1. Preheat oven to 175 degrees F. Whisk flour, sugar, baking powder, and salt in a medium bowl. Add egg, milk, and butter; whisk until combined but still slightly lumpy.
  2. Heat a large nonstick skillet over medium heat. Place 5 banana rounds in pan, about 3 inches apart. Spoon one tablespoon batter over each; cook until large bubbles cover surface, 1 to 2 minutes. Flip, and cook until bottom is golden, about 1 minute more. Transfer to a baking sheet, and keep warm in the oven.
  3. Repeat with remaining banana rounds and batter. Saute extra banana slices in butter until golden; serve with pancakes.

Yield: 4 servings

    I\\\'ve been making these for years now, but I don\\\'t do it from scratch. As a kid you get bored with regular pancakes, so I decided to add sliced up bananas to it. Only thing different is I use the boxed mix and add the bananas that way. They\\\'re also great with chocolate chips.

    i modified this recipe a lot. i didn\\\'t see the point to cooking the pancakes, so i made the batter and used it on a skillet. also, i only used about a tablespoon of butter, 1/4 cup whole wheat flour and 3/4 cup all-purpose flour, and added 1 mashed banana and some frozen blueberries. it was delicious!

    Definitely the best pancakes I\'ve made. So simple yet delicious enough by themselves that you really don\'t need syrup or the extra sauteed bananas (just top with freshly sliced bananas). I modified this recipe to a slightly healthier version by substituting 1/4 C of the flour with whole wheat flour and using only about 1 tbsp of sugar and 1 tbsp of butter -- still resulted in fantastic pancakes!
