    Why all the chopping and adding of ingredients when you can just mash up the avocadoes with a good pre-made salsa that you like? That\'s all I do, but I do add some GARLIC sat, onions, and LEMON, not lime. I\'m a man and a beginning-to-intermediate cook. It seems to me recipes always overcomplicate things with too many ingredients that you can do without. I cook to eat, not to show off. People go ape-poopy over my guacamole even though (heaven forbid!) I use pre-made salsa TO MAKE IT EASIER-- what a concept, eh?

    There are many authentic Mexican Guacamole recipes, but the best I learned from my ex husband who was from Guadalajara is as such:
    2 avocados
    - Mash and add tsp. or two of water until texture is smooth
    Add:
    A touch of lime juice,
    A sprinkle of garlic powder
    1 Tblsp. finely minced onion ( so small you almost cant see them)
    Salt and pepper to taste
    ~This recipe is the creamiest, most simple and savory guacamole ever. No need for tomatoes, chiles, or cilantro. Those things mask the flavor of the avocados.

    LIME!!!!!!! Classic Quacamole has Avacado, onion, cilantro, tomato, salt and LIME!
    No lime-- not authentic! Ole!

    though i was born, raised and live in Mexico. Not everyone use lime, unless the avocado has no flavor, which often happens with non mexican avocados... and pepper? really????

    California Guacamole

    2 Fresh Haas Avocadoes
    1/2 c. Finely chopped Red Onion
    2 T. Fresh Salsa
    (Traditional Tomato is fine, but Peach and Mango really adds a creative edge!)
    2 cloves Garlic, chopped or smashed if you\\\'re pressed for time (no pun intended!)
    a few sprigs of Cilantro, finely chopped
    1 tsp. Bacon Bits
    3 t. of Lime Juice
    a pinch of Sea Salt
    a dash of Cayenne Pepper
    1 t. finely chopped Jalepeno (optional)

    Mix all ingredients well, chill for one hour. Serve with tortilla or pita chips or chopped veggies, or use in tacos, burritos or burgers!

    Try it, you will love this!

    I really don\'t like AVACADOES, but my wife makes it with no garlic and lots of jalapenos (with the seeds) and cilantro.....

    When you prepared the guacamole put the bone of the guacamile in the middle in order to keep it longer fresh and good looking

    SERRANO and no Jalapeno , and not lime, lime is use sometimes just to help the avocado don\'t get black so fast, but change the flavor to much, I don\'t like with lime. Also instead all that onion put another avocado, in the end the avocado is the STAR and is what everybody wants to taste. Oh... I never heard about pepper or tasted that way, so i suggest just use salt.

    For this gringo, that\'s way, way too much cilantro. I like cilantro in pico de gallo and with seafood, but it easily over-powers the wonderful avacado. Also, be real careful with that jalapeno.
    I do agree with other reviewers re. the lime: use it, love it.

    Absolutely right about the lime. I asked for them to put lime in it at Rosa Mexicano once, and they looked at me like I was from Mars!

    What doe Martha Stewart know about Mexicans food!
    Were is the lime juice? It turns brown very quickly without it!
    Lime juice also gives a nice litttle tang.

    You\'re right Mr. Jay, there\'s no mention of garlic here, but she certainly likes cilantro, which I do NOT include in my guac. And, only 1 avacado? I guess she doesn\'t like to share, either.

    This is how I make mine:
    3-4 med. Avacados
    1/4 cup finely chopped Onions
    1 Tbsp. of finely chopped Garlic (out of the jar or even a tsp. of the powdered stuff will do it)
    1 large chopped Serrano pepper (seeds and all, omit altogether for non-spicy recipe)
    1 large Tomato, cubed, seeds and all
    1 Lemon (I\'ve never used lime), freshly-squeezed, seeds removed)
    Salt and Pepper

    Scoop out and mash the avacado in a bowl, add the onion, garlic, Serrano, and tomato; stir, do not mash; add salt and pepper to taste; stir in part of the lemon juice, use the rest to top it so it stays pretty green.

    My guacamole is usually the first dip to go at any party. Enjoy!

    I make mine with tomatoes, onions, tabasco, worchestershire sauce, garlic, salt, and pepper. It may not be "classic" but many people really like it and have asked me to bring it for parties.

    I\'m a real Mexican and I have never heard of black pepper in guacamole.
    This recipe is spot on, although I wouldn\'t use tomatoes.
