In a skillet over medium-high heat, melt butter. Add onion; cook until translucent, 2 minutes. Add garlic, bell peppers, zucchini, squash, lima beans, and corn. Season with salt and black pepper; cook, stirring, until vegetables are tender, 10 minutes. Stir in sage, and serve.
If you substitute the the 1/2 cup of butter for olive oil you will make it heart healthy (as veggies should be), rather than artery clogging. It is really delicious with olive oil. :)
We love this recipe! We \'ve been making this side dish for about four years, and everyone loves it, to include the babies! It wouldn\'t be fall without Martha\'s sucotash! Super easy! We use dried spices lots of times.
