Ingredients

  1. 1/2 cup unsalted butter
  2. 1 medium onion, cut into 1/4-inch dice
  3. 2 cloves garlic, finely chopped
  4. 2 red bell peppers, cut into 1/4-inch dice
  5. 2 zucchini, cut into 1/4-inch dice
  6. 2 yellow summer squash, cut into 1/4-inch dice
  7. 1 cup frozen lima beans
  8. 1 cup fresh or frozen corn kernels
  9. Salt and freshly ground black pepper to taste
  10. 2 tablespoons fresh sage, coarsely chopped

Cooking Directions

  1. In a skillet over medium-high heat, melt butter. Add onion; cook until translucent, 2 minutes. Add garlic, bell peppers, zucchini, squash, lima beans, and corn. Season with salt and black pepper; cook, stirring, until vegetables are tender, 10 minutes. Stir in sage, and serve.

Yield: 8 servings

    If you substitute the the 1/2 cup of butter for olive oil you will make it heart healthy (as veggies should be), rather than artery clogging. It is really delicious with olive oil. :)

    We love this recipe! We \'ve been making this side dish for about four years, and everyone loves it, to include the babies! It wouldn\'t be fall without Martha\'s sucotash! Super easy! We use dried spices lots of times.

    There is no need for the butter. It can be substituted with Olive Oil.

    not one vegetable in this recipe is an autumn vegetable. all spring and summer veg. you need to get your seasons in order.
