  1. 1/2 cup unsalted butter
  2. 1 medium onion, cut into 1/4-inch dice
  3. 2 cloves garlic, finely chopped
  4. 2 red bell peppers, cut into 1/4-inch dice
  5. 2 zucchini, cut into 1/4-inch dice
  6. 2 yellow summer squash, cut into 1/4-inch dice
  7. 1 cup frozen lima beans
  8. 1 cup fresh or frozen corn kernels
  9. Salt and freshly ground black pepper to taste
  10. 2 tablespoons fresh sage, coarsely chopped

2. Cooking Directions

  1. In a skillet over medium-high heat, melt butter. Add onion; cook until translucent, 2 minutes. Add garlic, bell peppers, zucchini, squash, lima beans, and corn. Season with salt and black pepper; cook, stirring, until vegetables are tender, 10 minutes. Stir in sage, and serve.

    We love this recipe! We 've been making this side dish for about four years, and everyone loves it, to include the babies! It wouldn't be fall without Martha's sucotash! Super easy! We use dried spices lots of times.
