1. Ingredients

  1. 1 pound very lean sirloin of beef, trimmed of visible fat
  2. 1/4 pound Chinese or Vietnamese rice noodles (banh pho)
  3. 3 cups homemade beef stock
  4. 3 tablespoons Asian fish sauce (nam pla)
  5. 1 1/3 cups fresh bean sprouts
  6. 1 small onion, peeled and very thinly sliced
  7. 4 scallions, trimmed and very thinly sliced
  8. 2 Thai chile peppers, very thinly sliced crosswise
  9. 1/3 cup fresh cilantro leaves or Thai basil, coarsely chopped
  10. Asian hot-chile sauce

2. Cooking Directions

  1. Wrap beef in plastic wrap, and place in the freezer for about 1 hour.
  2. Meanwhile, fill a large bowl with cold water; add rice noodles. Let soak until soft, about 30 minutes. Drain; set aside.
  3. Combine beef stock, 1 1/2 cups water, and fish sauce in a large saucepan, and set over medium-high heat.
  4. Remove beef from freezer. Using a mandoline or a very sharp knife, slice beef into very thin (1/8 inch) strips.
  5. Divide noodles among six serving bowls, and arrange strips of meat over them. Raise heat under stock, and bring to a boil. Pour boiling stock over meat and noodles, pushing beef into hot liquid so that it cooks. Arrange bean sprouts and other accompaniments over beef and noodles; serve immediately with Asian chile sauce, if desired.

    This is a recipe "based" on Vietnamese Pho. It is missing a few key ingredients, like star anise and the traditional garnishes like Thai basil and lemon. The Nuoc Mam or fish sauce is usually added along with the garnishes, this allows the eater to put as much or as little as they would like. Pho is traditionally eaten at any meal, especially at breakfast. The picture is accurate, as the beef is placed in the bowl raw and the boiling broth is poured over the beef and this cooks the beef. This is probably very good; just not traditional.

    The soup was very easy to make and tasted really good. I am sure it is nothing like real Vietnamese Soup, but neither are most receipes for Mexican, Italian, etc foods, everything is Americanized to make it easier and faster to cook. Would highly recommend this soup. A whole lot cheaper to make than to go to Noodle House!

    IT WAS QUICK AND EASY TO MAKE....10 POINTS JUST FOR THAT ALONE!

    ...AND IT TASTE GOOD AS WELL......I DON\'T KNOW NOTHING ABOUT VIETNAMESE FOOD OR THE PEOPLE WHO COOK IT OR LIVED THIER...I CALL THIS "SPICEY BEEF SOUP"

    AND I WILL MAKE IT AGAIN!

    Well, for all of you who say that they don\'t have to make it exactly like Vietnamese people, I say to you, then it shouldn\'t have the word "Vietnamese" in the title. Simple.

    I assume the authors were trying to label their concoction Vietnamese Pho soup. It\'s nothing like it. Pho takes hours upon hours to make the broth, and it\'s in no way simple to make.

    They should just call it beef noodle soup, without lying about it\'s origins.
