Please IGNORE that first step. Washing dead poultry under your tap adds nothing to the flavor but WILL cover your kitchen in extremely toxic bacteria as the water droplets splash off the carcass. It is high time this urban myth was put to bed about rinsing meat under taps meant for human use.

What if you don\'t want to use wine? I have a family member on Antabuse and he can\'t have alcohol (this will be the first alcohol free Thanksgiving that me and my g/f prepared)....otherwise recipe sounds great!!
