Heat oil in a large (3-quart) saucepan over medium-low heat. Add ginger, garlic, and pepper flakes; cook, stirring, until fragrant, about 1 minute. Add carrots, coconut milk, and 3 cups water. In a small bowl, mix cornstarch and 2 tablespoons water until smooth; add to pot. Bring to a boil.
Break pasta in half; add to pot. Return to a boil, reduce heat to medium, and simmer until pasta is al dente and carrots are just tender, 3 to 4 minutes.
Add shrimp; stir until opaque, about 1 minute. Remove pot from heat, and stir in lime juice; season with salt. Ladle into serving bowls, and garnish with scallions.
My fiance and I had great hopes when we saw this recipe. It appeared to have all the components of a tasty dish. However it tasted horrible! Way, way too bland. While it had ginger, lime juice, scallions, red pepper flakes, etc., they are not in enough quanities to bring out flavor. We even added more pepper flakes, more scallions, some lime zest, and yet it still tasted bland. The only way I can see this being better is if you reduce the amount of carrots, add more ginger and garlic, and perhaps fish sauce. Something, ANYTHING, to add more flavor. My fiance refused to eat the leftovers and I took some for lunch. Sadly, after eating some for lunch today I think I will be throwing out the remaining amount at home because it is so difficult to eat.
Pretty much, the soup recipe as is was fabulous. I didn\'t have scallions for a garnish though, so I finely chopped some cucumber and fresh mint, then tossed them with some rice vinegar. A tiny scoop on top of the soup was a nice flavor complement. Oh, i also used rice stick noodles instead of pasta to make this gluten-free.They cook much more quickly, so this is done super fast.
This is definitely not a hearty or filling type of soup, neverthless, it tastes great!!!! I love shrimp and the flavor of the red peppers, ginger and garlic it is subtle and very flavorful. I was very skepticle about this soup because the reviews that were posted, the ones that most of the one that were positive weren\\\'t talking about the actual dish, but more so the ingredients. So I took a chance and was pleasantly surprised!!! This is definitely something I will make again. I sharedit with my teenage brothers and sisters (who are very tough critics), LOVED it!!! So if you\\\'re looking for a soup that is light, but also very flavorful this is it!
