Spaghetti With Bolognese Sauce

1. Ingredients

  1. 1 tablespoon olive oil
  2. 2 onions, finely chopped
  3. 3 carrots, finely chopped
  4. 6 cloves garlic, minced
  5. 1 pound ground beef
  6. 1 pound ground pork
  7. 1/4 cup tomato paste
  8. Coarse salt and ground pepper
  9. 1 cup dry white wine
  10. 1 (28 ounce) can crushed tomatoes in puree
  11. 1 cup milk
  12. 12 ounces spaghetti
  13. Finely grated Parmesan cheese, for serving

2. Cooking Directions

  1. Make sauce: In a Dutch oven (or 5-quart saucepan), heat oil over high heat. Add onions, carrots, and garlic; cook, stirring, until slightly softened, about 2 minutes. Add beef and pork; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste; cook 1 minute. Season generously with salt and pepper.
  2. Add wine and tomatoes. Bring sauce to a simmer; cook, partially covered, stirring occasionally, until thickened, about 1 hour. Add milk; simmer until completely absorbed, about 15 minutes more. Season again with salt and pepper.
  3. When sauce is almost done, cook pasta in a pot of boiling salted water until al dente, according to package instructions; drain. Toss pasta with half the meat sauce; save remaining sauce for next day. Serve sprinkled with cheese.

Yield: 4 servings

    Fairly easy to do, but you can play around a bit with the ingredients. Use red wine instead of white.

    I would just like to say, that if you don\'t have any Grated Parmesan cheese, you can get away with cheddar cheese, not as good but still nice if grated on top.

    The main thing is to enjoy, and the sauces for pasta can be great fun to do and experiment with.

  • This IS Bolognese Sauce

    not sure why some others state this is not a bolognese sauce. It is. There are may regional variations even within the Bologna region. This recipe fits the description of a Bolognese sauce and very similar to what my people make who are from Italy...I would only add that it should be simmered longer than what this recpie calls for but Americans tend to rush things...

    if you eat this at a good time (about 6:00 pm), and I think it is just half of the calories one human need for the day. So its very nutritious (has a lot of protein), I skip the wine, that will make less calories.
