1. Ingredients

  1. 1 pound baking potatoes, cut into cubes
  2. 1 (14.25 ounce) can fat-free, reduced-sodium chicken broth
  3. 1 cup milk
  4. 3 slices OSCAR MAYER Bacon, cooked, crumbled and divided
  5. 3/4 cup KRAFT Shredded Cheddar Cheese, divided
  6. 2 tablespoons sliced green onions, divided
  7. 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

2. Cooking Directions

  1. Place cubed potatoes in large microwaveable bowl; microwave on HIGH 5 min., stirring after 2-1/2 min. Add broth and milk to bowl; stir. Microwave on HIGH 10 min., stirring after 5 min. Crush potatoes with a potato masher.
  2. Reserve 2 Tbsp. each of the bacon and cheese and 1 Tbsp. of the onions for topping; set aside. Add remaining bacon, cheese and onions to soup.
  3. Serve topped with reserved bacon, cheese, onions and sour cream.

Yield: 4 servings

Serve this hearty soup with a quick bagged green salad tossed with your favorite KRAFT Dressing and a whole-wheat roll.

Variation

    It is a simple recipe but it needs a little help. The potatoes took longer to cook than stated. I cooked the potatoes for about 10 extra minutes in the chicken broth and milk. Once they were done, I took a hand mixer to puree the potatoes for a thicker consistancy. I also added a 1/2 a stick of butter, about a teaspoon of salt and pepper. After that, it was a great soup.

    I added one can of chedder soup to the recipe and it was great. It takes longer for the potatoes to soften add about 10 extra mins to cook time.

    Overall I love this dish. Only thing is that I had to play around with the recipe a little to get it to be perfect (thats why I love cooking!). I suggest boiling the potatoes in chicken broth on the stove, then mashing and adding milk instead of microwaving them. It makes less dishes to clean and tastes better! So this is really great and I totally recommend it!

    This turned out beatuifully. I added a few more strips of bacon, butter, and cheddar cheese soup to it. I had no problems getting my potatoes soft in the microwave. I just cubed them a little smaller. When cooking potatoes in the microwave you always want to cover them tightly in saran wrap. The same goes for baked potatoes. This does require about 20 min. prep time to cook and crumble your bacon and cut up oinions and potatoes. From the Microwave Queen.

    I do think the microwave was a bad way to go...The first time I did it I just boiled the potatoes as normal and then followed the rest of the directions.
    I loved the taste of it, but I plain LOVE soup! This was the first soup that I ever made. It was delicious.
    Instead of green onions I used regular white onions and chopped them to make them small. I don\'t even like onions but I like how it added a new texture to the soup and gave it a rich taste.
    Over all this was a great dish.
