1. Ingredients

  1. 1 2/3 cups hot water
  2. 1 (6 ounce) package STOVE TOP Stuffing Mix for Chicken
  3. 1 1/2 pounds boneless skinless chicken breasts, cut into bite-size pieces
  4. 1 small green pepper, chopped
  5. 1 small red pepper, chopped
  6. 1 small onion, chopped
  7. 1 (14 ounce) jar spaghetti sauce

2. Cooking Directions

  1. Preheat oven to 425 degrees F. Add hot water to stuffing mix; stir just until moistened. Set aside.
  2. Place chicken, peppers and onions in 13x9-inch baking dish; mix lightly. Pour spaghetti sauce over chicken mixture; top with prepared stuffing.
  3. Bake 30 min. or until chicken is cooked through.

Yield: 6 servings

    My family loved this meal. By adding pre-marinated (Garlic & Herb) boneless chicken from Costco, I was able to incorporate even more Italian flavors. We even added a bit of cheese to the top, which the boys loved. Others used a bit of the ranch dressing from their salad and mixed it w/this meal.

    Made it to recipe one time, and was pretty good. The next time, I sauteed baby portobellos, peppers, rosemary and onions in garlic butter and deglazed the pan with marsala wine. It was excellent. Also, you can ditch the stuffing and have a more traditional cacciatore, but you\\'ll want to add orgegano, basil, and maybe a bit of sage, since the spices in this dish come from the stuffing.

    this dish was excellent...my husband is very picky and he even loved it...he said, "honey, you hit a home-run with this one"...the prep time was maybe a little longer than 10 mins....and i cooked the dish for 40 mins at 350 degrees....i will definately cook this again...and very soon!
