1. Ingredients

  1. 1/2 pound large shrimp, peeled, cleaned
  2. 3 tablespoons KRAFT Zesty Italian Dressing, divided
  3. 2 tablespoons KRAFT 100% Grated Parmesan Cheese
  4. 1 small clove garlic, minced
  5. 1 tablespoon chopped fresh parsley
  6. 6 RITZ Crackers, crushed

2. Cooking Directions

  1. Preheat oven to 400 degrees F. Place shrimp and 2 Tbsp. of the dressing in resealable plastic bag; refrigerate 10 min. to marinate. Meanwhile, mix remaining 1 Tbsp. dressing and the remaining ingredients in small bowl until blended.
  2. Remove shrimp from marinade; discard marinade. Partially split each shrimp lengthwise by making a long cut along the underside of each shrimp, being carefully not to cut all of the way through the shrimp. Open shrimp slightly and place, cut sides up, in shallow baking dish. Spoon about 1 Tbsp. of the stuffing mixture on top of each shrimp.
  3. Bake 7 to 8 min. or until shrimp are pink and cooked through.

Yield: 2 servings

Notes:

Make Ahead

Marinate and stuff the shrimp ahead, but do not bake. Cover and refrigerate up to 10 hours. When ready to serve, bake as directed, uncovered, for a delicious quick dinner.

    I decided to make this for dinner tonight, just got done with it and liked it, added more zesty Italian than recommended and used whole-grain Club crackers...will most definitely prepare again.

    I made this dish to go with our prime rib for Easter dinner. It was great. I did it a little differently by putting the stuffing on top of the shrimp instead of inside because I was having trouble getting it to stay in. I also added a small amount of shredded cheese to the top. I used Muenster cheese. This is a great impressive receipe and I will be making alot more! So easy!
