Ingredients

  1. 2 teaspoons oil
  2. 4 boneless skinless chicken breast halves
  3. 2 cups frozen broccoli florets
  4. 1 (10.75 ounce) can condensed cream of chicken soup
  5. 1/4 pound VELVEETA Pasteurized Prepared Cheese Product, cut up
  6. 3 cups hot cooked MINUTE White Rice

Cooking Directions

  1. Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 min., turning after 3-1/2 min.
  2. Add broccoli; stir. Stir in soup and Velveeta until well blended. Reduce heat to medium; simmer 7 min. or until chicken is cooked through.
  3. Serve over the hot cooked rice.

Yield: 4 servings

Substitute

You can use any condensed cream soup and frozen vegetable combination that you have on hand, such as cream of mushroom soup and frozen peas.

    I actually have used extra virgin olive oil and fresh broccoli and it came out very good! loved it!!

    I dont know who would answer though...But can we use virgin olive oil and some fresh broccoli instead? (well its a moot point about the broccoli) But what about the oil? Because if not then I\'ll just pop out some Canola Oil. :)
