  • Low-fat alfredo sauce actually came out well

    Sam - March 14, 2007 04:37:45 AM PST
I was surprised how good it tasted. And my girlfriend liked it. While it can\'t beat real alfredo sauce, not a bad alternative!

  • Very tasty!

    Delectable Creations - November 12, 2007 01:16:43 PM PST
This was so yummy and I found a few ways to make it even healthier than even this recipe is. Even with a few healthier alternatives ( like fat free cream cheese) it was still extremely tasty!

I never seem to have enough time to cook, but this was so fast and easy! Even re-heated it was creamy.

  • Suprisingly Good

    Michael M - November 19, 2007 07:14:11 AM PST
I\'m a die hard for traditional Italian food and would normally snub my nose at a recipie like this but it was actually quite good and flavorful. Was nice to have such a rich meal without all the fat that comes from the heavy cream. Worth a try for sure.

  • Diabetic/Heart Attacl

    Meghan J - February 4, 2008 02:29:46 PM PST
This recipe was AMAZING!!! I added fresh cut basil and sun-dried tomatoes. I made this for my father on father\'s day. He\'s a diabetic and has suffered from a heart attack in the past. He loves alfredo sauce and I thought this "smart" alfredo would be perfect. Try it with the fresh basil and sun-dried tomatoes. I come from a family of cooks. This recipe got everyone talking and they\'ve been making it ever since. ENJOY!

  • You can

    Sammy B - March 30, 2009 12:08:22 PM PST
LOVE LOVE LOVE!!! I am such a Alfredo lover, so naturally I was skeptical about this recipe. What a surprise! This is soo good, and it is easy to make. I have made this for a dinner party and until I told everyone it was low fat and less calories than traditional Alfredo, they didn\\\'t have a clue!

The fettuccine alfredo was very tasty and yummy with the low-fat sauce. It filled my senses with the aroma and satisfied me when I was really hungry. I\\\'m going to treat this with my cousins!

  • Expand your mind!

Every made a "white lasagna"? The recipies vary on favorite flavors and tendency to be vegetarian or not.

The basic idea is an alfredo sauce (this one would have to be doubled probably) lasagna noodles and then a cheese layer. (I dont like riccota so I have always done cottage cheese with an egg and parsley in it)

When I make white lasagna I usually layer spinach and chicken (cut into small cubes and pre-cooked) I have used a mixture of chopped sundried tomatoes and cooked sausage... I have layered thin cut fresh tomatoes... Ive done things with red peppers and ground beef and onions...other times with broccoli.... it just all depended on who I was making it for.

This sauce would be a great subsitute for the fatty alfredo that I have a love hate relationship with. With the cream cheese in it I bet it would bake and bubble up nicer than the alfredo would!!!

  • Sooo good!!

    Suzanne - July 11, 2008 05:44:50 AM PST
I have always loved alfredo, but I haven\'t eaten it for almost 6 years or so because how bad it is for you. This recipe was perfect to solve the alfredo drought! I made it for dinner last night and it was so creamy and tasted so close to the real thing that I couldn\'t really tell a difference. I did add some garlic powder and Tony Chachere\'s Creole seasoning at the end and it was perfect! Even my children loved it!

    Katie N - May 4, 2008 12:28:09 PM PST
This is really good for not being so fating. The more calories the better tasting most of the time. This is low calories and yummy. For picky eaters I\'m out there with you and it is really good.

  • Alfredo?

    BigDMundo - March 9, 2009 03:39:02 PM PST
There is NO chicken broth nor cream cheese in Alfredo sauce. I am very Italian, and I don\\\'t know any fellow Italians who use either of those 2 ingredients. Butter, garlic, parmesan cheese, half

  • Nutrition Info?

    Noreen - July 19, 2008 02:35:03 PM PST
The recipe sounds pretty good but they didn\'t include the nutritional information. All they state is that you save 300 kcals. I would prefer to see these recipes include the per serving nutritional information. This way I can plan around a recipe like this in terms of my daily nutritional intake.

  • Good

    sweetlilme - November 12, 2007 01:27:35 PM PST
This was actually quite good after I took out the nutmeg and added more black pepper instead along with adding a dash of garlic powder. It might just be me, but I can\'t fathom the idea of nutmeg in a dish that\'s normally meant to be garlicy and peppery, nutmeg belongs in pumpkin pie and molassess cookies!

  • SORRY

    nifer - January 7, 2008 02:16:43 PM PST
I am sorry but in this day and age it is hard for most families to get a meal together let alone eat together this is just something that can pull families together. These are merely suggestions NO one has to eat them.

  • not crazy about it but here is an alternative to the sauce

    ERIKA G - November 12, 2007 02:19:52 PM PST
Actually, a real bechamel sauce (or alfredo as most commonly known) does include nutmeg.
I have to agree that this recipe needs to have nutrition facts.
I personally make a very delicious cream sauce for my noodles when I do not want to cook. I fry a shallot with garlic in a small amount of olive oil, seasoned with salt, pepper and paprica. Then I add milk, mushrooms and a chopped red pepper, some parmigiano reggiano, sun dried tomato paste and italian parsley and voila! dinner is ready. is much healthier than eating cream cheese that is all fat and still mighty delicious I might add. The best part, it does not take more than 10 minutes to cook :)

  • Nutrition Facts???

    gibson_artist - November 12, 2007 01:37:53 PM PST
Crafts Foods must have stock in funeral parlors. This stuff is a "heart attack on a platter"! It\'s the LAW than nutrition facts be attached to recipes. Another example of a major corporate scofflaw.
