  1. 2 cups MINUTE Brown Rice
  2. 1/4 cup lite soy sauce
  3. 2 tablespoons KRAFT LIGHT DONE RIGHT! CATALINA Reduced Fat Dressing
  4. 3/4 teaspoon ground ginger
  5. 1 pound beef flank steak, cut into thin strips
  6. 2 teaspoons cornstarch
  7. 1 (16 ounce) package frozen stir-fry vegetables
  8. 1/4 cup PLANTERS Dry Roasted Peanuts

2. Cooking Directions

  1. Prepare rice as directed on package. Meanwhile, mix soy sauce, dressing and ginger until well blended; set aside.
  2. Toss steak with cornstarch. Spray large nonstick skillet with cooking spray; heat on medium-high heat. Add steak mixture; cook and stir 3 min. or until steak is cooked through. Add vegetables and soy sauce mixture; cook and stir 3 min. or until sauce thickens and vegetables are heated through.
  3. Serve steak mixture over rice; top with peanuts.

Yield: 4 servings

Substitute

Substitute 4 tsp. flour for the 2 tsp. cornstarch.

    I like the quick simplicity of the recipe but if you add a cup of beef broth your rice won't be so dry when you top it with the beef and vegees.

    Add 1/4 C. Chunky Peanut Butter and a sprinkle of Pepper Flakes and you have a good Kung Pao Beef...or replace with Chicken and you have Kung Pao Chicken :-)

    Well...I think 600 calories is pretty low cal considering thats how many calories a typical meal should be. If you're on a 1500-2000 calorie diet then 550-600 calories three times a day give or take a few is just right. Also if you're an active person or trying to be regularly active 600 calories really isn't much. But I think its pretty good considering its got rice AND meat which is pretty filling for just one serving. :)
