Ingredients

  1. 2 pounds Yukon gold potatoes, unpeeled, cubed
  2. 1/4 cup milk
  3. 2 ounces VELVEETA Pasteurized Prepared Cheese Product, cut up
  4. 1 green onion, thinly sliced

Cooking Directions

  1. Place potatoes in large saucepan. Add enough water to completely cover potatoes. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 15 min. or until potatoes are tender. Drain potatoes; return to saucepan.
  2. Mash potatoes until light and fluffy, gradually adding milk alternately with the VELVEETA.
  3. Sprinkle with the onions.

Yield: 8 servings

Go ahead and leave the potato skins on. Not only does it save on the prep time, but also adds valuable nutrients.

    We tried it and it tasted just fine.
    We did change Velveta to Cheddar - couldn't help improving it a bit :-)

    I agree, but instead of cheddar, we used mozzarella. I guess it's your own preference. :)

    Sometimes, guys, really, it is not about us. Try to make something the kids like for once. For myself, I agree with all the food snobbery. Mmost kids, I have found, don't give a rats *ss about what is supposed to be cool, hip, and sophisticated, they just want food they like. Sick as it sounds, my kids love the Velveeta, and so do the friends who come over. They turn their little noses up to my fancey Greek or French or whatever dishes.
