Creamy Chicken and Cheddar Rice

1. Ingredients

  1. 1 pound boneless skinless chicken breasts, cut into strips
  2. 1 teaspoon garlic powder
  3. 1 (10.75 ounce) can condensed cream of mushroom soup
  4. 1 (10.75 ounce) can milk
  5. 1 1/2 cups MINUTE White Rice, uncooked
  6. 2 cups chopped fresh broccoli
  7. 1 cup KRAFT Shredded Cheddar Cheese

2. Cooking Directions

  1. Spray nonstick skillet with cooking spray. Add chicken; cover. Cook 5 min. or until cooked through. Sprinkle with garlic powder.
  2. Add soup and milk. Bring to boil. Stir in rice and broccoli; cover. Reduce heat to low; simmer 5 min. or until rice is tender.
  3. Stir in 1/2 cup of the cheese; sprinkle with remaining cheese.

Yield: 4 servings

Notes:

Substitute

You can always substitute other fresh vegetables you have on hand for the broccoli, such as thinly sliced peppers or sugar snap peas.

Cooking Know-How

If you're reheating leftovers the next day, stir in a little milk first to keep it creamy.

    Didn\'t really have a lot of flavor. I think I will try is again and add some fresh garlic and onions to the chicken when it\'s cooking. Also did it with 1% milk and a bit less cheese to make it healthier. Brown rice would be better maybe.

    I made this recipe, but added a little something extra. I added green onions and oregano. It was yummy.

    I\'ve made this before and you just need to use nonfat milk, reduced fat cream of mushroom and Krafts Fat Free Shredded Cheddar..... its not the old fat free cheese that had no taste and didn\'t melt right.

    I like making this dish because it\'s so simple and it\'s healthy. I make it using brown rice instead of white, and it still tastes fine. It is a little too bland though so I might try marinating the chicken next time. I did try adding a little oregano to the dish and it brought the flavor up a little but not a whole lot. If you want something quick and healthy for lunch the next day this is the dish to make.

    My husband hates rice but I love it so I am always trying new ways to put it in a meal. I made this and during dinner he turns to me and says you can keep this on the list of things to make for dinner. For him to say that about a rice dish it must be good.
