Ingredients

  1. 1 medium onion, chopped
  2. 6 ounces PHILADELPHIA Cream Cheese, softened
  3. 1 (14.5 ounce) can chicken broth
  4. 1 tablespoon GREY POUPON Dijon Mustard
  5. 1 1/2 pounds potatoes, peeled, thinly sliced
  6. 35 RITZ Crackers, crushed
  7. 3 tablespoons KRAFT 100% Grated Parmesan Cheese
  8. 2 tablespoons butter, melted
  9. 2 teaspoons chopped fresh parsley

Cooking Directions

  1. Preheat oven to 350 degrees F. Lightly spray large skillet with cooking spray; heat on medium-high heat. Add onion; cook 5 to 7 min. or until tender, stirring often. Add cream cheese, broth and mustard; mix well. Remove from heat; set aside.
  2. Lightly spray 13x9-inch baking dish with cooking spray. Toss potatoes with cream cheese mixture; spoon into prepared pan. Combine crushed crackers, Parmesan cheese, butter and parsley; sprinkle evenly over potatoes.
  3. Bake 50 min. to 1 hour or until potatoes are tender. Let stand 5 min. before serving.

Yield: 16 servings

Special Extra

For added color and flavor, substitute 1 medium sweet potato for 1 white potato.

Make-Ahead

Prepare recipe except for baking. Cover; refrigerate until ready to bake. Bake, uncovered, 1 hour or until potatoes are tender.
