1. Ingredients

  1. 5 spears asparagus, cut into 2-inch pieces
  2. 2 tablespoons KRAFT Sun-Dried Tomato Vinaigrette Dressing
  3. 1/2 cup chopped cooked chicken
  4. 1 ounce KRAFT Monterey Jack Cheese, cubed
  5. 1 tomato, cut into wedges

2. Cooking Directions

  1. Place asparagus spears on microwavable plate with 1/4 cup water; cover and vent. Microwave on HIGH 1 min.
  2. Spoon dressing into individual salad bowl.
  3. Top with chicken, cheese, asparagus and tomato. Toss lightly.

Yield: 1 servings

Great Substitute

Substitute Kraft Low-Moisture Part-Skim Mozzarella Cheese for Kraft Monterey Jack Cheese.

Make-Ahead

Blanched asparagus spears are great to have on hand to include in nutritious lunches.

    Enjoyed the original salad, but made some changes the second time around. I didn't cook the asparagus- instead I used small fresh asparagus. Also I added some fresh herbs from the garden. The salad was outstanding. The kraft dressing was great. I use the dressing on everything including fish and beef dishes.

    Asparagus and tomatoes are lovely together, and the kids went for it, since I told them it had cheese in it. Delightful and a change from the humdrum iceberg lettuce salads. Tangy sauce, excellent choice!

    Vegetables are always great! I would think that one should cook his/her own chicken. Maybe turn your left-over grilled or baked chicken into the key protein in this salad. Try to avoid the canned products that are loaded with preservatives (sodium-based products) if possible. I think you'll get enough sodium in the vegetables and dressing without adding any from the protein source. While cheese makes everything better in my opinion, we should try to remember that some cheeses are healthier than others. Maybe use a shredded cheese blend. I tend to use less cheese when I do that. I sometimes over-do it when I use the cubes....just have to watch that whole portion size thing..so I know what I am eating...

    I think this is a wonderful salad idea and a break from the ordinary. My girlfriend is an nutritionist and good at eating healthy, so I'd like to thank her for helping me make better food choices and noticing things inside recipes.

    Gosh, the world has turned so health-obsessed and crazy that even Kraft's salad recipes aren't safe from complaints anymore. If it's helping ANYONE -parents, kids, teens, older folks, etc-, steer clear of OTHER unhealthy foods, whether from a fast food joint or those boxes of Twinkies sitting in one's cupboard, then Kraft is doing its job. Not sure when I missed the memo, but I never thought an OUNCE of cheese cubes was a bad thing. And 2 tablespoons of dressing isn't going to give you or your child a heart attack.You health nuts need to lighten up, no pun intended.
