1. Ingredients

  1. 1/2 red onion, chopped
  2. 2 tablespoons KRAFT Sun-Dried Tomato Vinaigrette Dressing
  3. 1 (14.5 ounce) can stewed tomatoes, undrained
  4. 1 green pepper, chopped
  5. 1/2 cup black olives
  6. 1 pound frozen fish fillets, such as haddock, halibut or cod, thawed

2. Cooking Directions

  1. Cook onion in dressing in large skillet until tender.
  2. Add tomatoes, pepper and olives.
  3. Top with fish; cover. Simmer gently on medium heat 8 to 10 min. or until fish flakes easily with fork.

Yield: 4 servings

    This was a great and easy dinner to fix. The flavors are great and the texture excellent. Because I have 3 teenager in our household I added a side dich of white rice with green peas who provided a great addition for my three young big eaters boys. The rice was seassoned with fresh garlic fried in olive oil. My family loved it!

    Fixed this dinner for the family, there wasn\'t anything left when they got through. Super tasting and for the novice chef a great meal to prepare and present. Just do it!
